Cinnamon Carob Cake

Cinnamon Chocolate (Carob) Cake
Combine in large bowl:
2 C sugar
2 C flour
Mix in a saucepan:
1 stick butter
1/2 C shortening
4 T carob powder
1 C water
Bring to a rapid boil and pour over dry ingredients and stir well. Then add:
1/2 C buttermilk (didn't bother me, but wasn't sure if may bother some)
1 t soda
1 t vanilla
2 eggs, lightly beaten
1 t cinnamon
Mix well and pour into a greased 13x9 pan. Bake at 400 degrees for 20-25 minutes. Cool.
Cinnamon Chocolate (Carob) Frosting
Melt and bring to a boil:
1 stick butter
6-7 T milk
1 box powdered sugar
1 t vanilla
4 T coca
-the original recipe also calls for 1 C chopped pecans, but I would recommend substituting sliced almonds or coconut instead as pecans are a problem for many people.
When my mom and I make this recipe, we usually cut the icing recipe in half.
This makes a wonderful cake- and as I said before, substituting the carob did not change the taste much at all (just didn't have as much richness to it). Not the most lean recipe, but great comfort food!

I'm newly diagnosed 4/23 and my birthday was yesterday (5/7) and my fiance... bless him... came onto the diet forum and searched for recipes. He made a chicken pasta dish he found (which was fantastic) and he made me this cake as my birthday cake!
I must say, while it's not chocolate (and I'm a chocolate foodie/snob) it was really good! very tasty! I think next time we might cut down on the amount of sugar in the frosting... or find a friendly vanilla frosting... as the frosting was super super sweet.

I'm glad you enjoyed it! It is my favorite, so I was ecstatic that the substitution of carob wasn't that noticeable!
Yes, the icing is sweet. I think that's why my mom always cuts the icing recipe in half. I'm wondering too if the addition of nuts helps cut the sweetness. Did you use any nuts in the icing? Next time I think I'll try substituting coconut.

Didn't use any nuts... not a fan of nuts in things. I'm wondering if just cutting some of the sugar to like 3/4 of a box instead of a full box would tame it a bit.
