Carob Cake Recipe

At first I wasn't too big of a fan of carob trying to replace my beloved chocolate, but y'all should check this out if you've been having some major cravings:

It's not my recipe, it's just from the Betty Crocker Cookbook with some IC substitutions made. It's on the site I recently made for food cataloging:

Sounds wonderful...I can't wait to further tweak it and make a sugar-free version! I will try tomorrow if I don't get called to a birth. (Midwifery student here...)

29 year old Mother to Sienna (born 4/17/09), Midwife, Birth Doula, Herbalist, and Massage Therapist with sudden onset of IC approx. 2/16/05 (after a PAP smear and routine gynecological exam). I tried a HUGE list of natural and alternative treatments (including Cystoprotek, Desert Harvest Aloe, Aloe gel, Glucosamine/Chondroitin, L-Argenine, Quercitin/Bromelain, Marshmallow Root...etc) for the first 9 months of having IC, without much relief, until I finally researched and started on my one allopathic medication that I take, which is Elmiron. This medication has really helped me.

My Elmiron experience:
~Previously took Elmiron 100mg three times a day
(9/29/05-7/06)
~Experimented with dosage (1-2 Elmiron a day recapped into a plain gelcap) and did well with occasional mild flares. (7/06-9/09)
~Stopped all together at the 1 year mark (9/29/06) for 10 days. Still felt good, with low-level symptoms.
~Decided to go back on it (10/16/06) to see if another year on it will bring me into full (zero symptoms) remission. Currently taking 1-2 pills a day, recapped into a plain gelcap.
~ 6/08...Tried to go off Elmiron again, had huge flare at the 3 week mark, went back on 100mg once a day for maintenance.
-I went off Elmiron for 2 months due to pregnancy and had a complete relapse of IC symptoms to pre-diagnosis levels of pain/frequency. I then went back on Elmiron at 10-12 weeks, but was unable to take it further due to severe morning sickness. The 2nd/3rd trimesters were MUCH better IC-wise, and postpartum is the best I have felt in years. I am no longer on Elmiron for now.

Also doing:
~Sugar-free/gluten free and strict IC diet (With an emphasis on organic, alkaline and whole foods)
~Prelief as needed

~Prenatal DHA/Fish oil supplement
~Vitamin D supplement
~Fem-dophilus and/or Culturelle probiotic

It looks great. On top of IC I have to cut out sweets, too.

I can't control my intake. Is there some animal that will eat until it dies? That's what I am.

I hear you on the sweets. That was the hardest part for me at first when I started changing my diet. I wish I had some good tips for you but I don't really. Things milder like IC friendly animal crackers in small amounts can seem like a real treat and you just have to ration them. I really have noticed a big difference when it comes to my sugar intake in relation to my urethral burning though. Even things that are made from scratch and should be bladder-friendly can cause burn if it is too rich. Over time, hopefully your sugar cravings will go down and of course it won't be as worth it because of the pain! Another trick I use after I've induldged (and even while I'm doing it ) is to drink TONS of water - even as much as a liter or so. This will help flush the burn out as it's coming and also helpfully fill you up faster on the non-sweets. All silly common sense stuff, but I just thought I'd share.

I've never read about sugar causing bladder symptoms. Why would that be?

Sorry about the sweet stuff. Consider yourself lucky, though, in some ways!

Ha, I'd trade you any day! It hasn't been so bad since I've upped the dosage on my Elmiron. I'm not sure I just know sometimes I need to be careful of my sugar intake. Anyone else out there or did I just totally make this up?

Sounds good. Let us know when you get the sugar-free version worked out. I do know that you might be able to sub the white sugar with Splenda Blend for Baking. Not sugar-free, but still less calories then when using white sugar.

I've copied over your cake reciepe and gonna give it at go. I'm like dying here for something familiar. I'm newly diagnosed too, and you know the ups and downs with that. Trying so hard to get a handled on a normal life.

Good luck! My mom says she thinks the frosting would last longer if the leftover cake was refrigerated (becaues of the eggs I guess). You might even want to experiment with the amount of sugar (for the cake part). I liked it how it was, but a non-IC friend of mine tried it and said it was sweeter than she would have guessed, so maybe it just depends on personal taste. I hope it works out okay

They list "Splenda" in the "May Be OK" column.

I don't think I've ever tried it and everyone is different, so it is hard to say. If you are trying anything else new in the carob cake for the 1st time, I would suggest staying away from the Splenda this time so if you do have a flare-up you will have more of an idea of what caused it. If, however, you've tried most of the other ingredients and not had a problem, then maybe now would be a good time to try Splenda out and see what your bladder thinks of it!

I will try splenda tongiht, I've been wanting to make some sweet potatoe. I hope there is no flare up, I had a bad one Saturday night and Sunday, took hours for me to find a place of peace with it. It's made me feel in a funk all day.
