Talking Pesto Sauce Recipe & Uses

My sister made up the following recipe for me. You can put it on pizza dough or pita bread with mozzarella for a no-mato pizza, put it on pasta, dip bread in it, grill shrimp or fish and use it a a marinade or dip.

Pesto Sauce

1/2 Cup packed fresh parsley leaves (must be fresh, not dried)
1/2 Cup packed fresh Basil leaves (must be fresh, not dried)
1/2 tablespoons finely ground almonds
1/2 teaspoon salt
1-2 garlic cloves
3/4 cup olive oil

Finely chop parsley basil & garlic

In a blender or food processor combine the parsley, basil, garlic, almonds, and a little oil at first, pureeing. With the motor running, slowly pour the remaining oil in, then season with the salt, (and pepper, lemon juice, cheese if you use them) and puree a brief moment longer.

Optional or additional ingredients you can use if you can tolerate them

2/3 Cup Pine nuts (about 3 oz)
¼ to ½ teaspoon white pepper
¼ to ½ teaspoon black pepper
1 tablespoon lemon juice
Parmesan cheese

Thanks for posting this! I love pesto and forget about it all the time, lol. I love to toss it with hot pasta and some additional safe parmesan!! YUM! Ok, must be getting close to lunch...

Align Probiotic daily for IBS
