Talking Great dessert recipe!

This is taken from www.SparkPeople.com. Sorry if it has been shared before!

Pear Crisp

Ingredients:

1/4 cup rolled oats
1 Tbsp walnuts
3 Tbsp. all-purpose flour
3 Tbsp. whole wheat flour
2 1/2 Tbsp packed light brown sugar
1/8 tsp. cinnamon
1 Tbsp. plus 2 tsp. canola oil
6 firm, yet ripe pears, peeled (if desired) cored and cubed
1/4 cup raisins
1 Tbsp. lemon juice
2 Tbsp. sugar
2 Tbsp. flour
1/8 tsp. nutmeg
Pinch of cloves

Preheat oven to 375 degrees. Lightly spray 8- or 9- inch round cake pan.

In food processor, pulse oats and walnuts 15 seconds. Add flour, brown sugar and cinnamon. Blend 15 more seconds. While running, drizzle oil and blend 30 seconds. Transfer to bowl and set aside.

In another bowl, toss pears with next 6 ingredients. Spoon pears into prepared cake pan. Cover with oat mixture, pressing down gently. Bake 45-50 minutes, until topping is brown and pears are bubbling. Serve hot.

Makes 9 servings.

(Nutritional Info...Calories: 179, Fat: 4.2g, Carbohydrates: 36.4g, Protein: 2.3g)



And obviously, you can substitute or leave out the raisins, lemon juice, and cinnamon, depending on what bothers you.

Vistaril 25mg in the evening (currently not taking due to pregnancy)

Ditropan, 5 mg 3x's a day
Others: (IBS and anxiety)
Wellbutrin 150mg 2x's a day

I love to bake! Thanks for sharing.

Is a small amount of lemon juice like that usually problematic? I've hesitated to use recipes that call for lemon juice because I wasn't sure. My biggest sensitivies are vinegar, most soda, caffeine and citrus fruit. I can, however, eat things like jelly beans (not Jelly Belly - they have caffeine!). And I'm OK with the hard candy lemon drops. I've also been OK with lemon cake mix.

Hey Stacey, for me that amount is usually ok, and it's dispersed amongst other things, so I always felt it's not like I was actually just eating one tablespoon of lemon juice on it's own... lol

In Search Of Normal
IC (Feb 2001):

Pain:
OxyContin (started 9/06) (dosage still being determined, but working up to 3 tablets (10 mg) twice per day, for a total of 6)
Effexor (150 mg/day; I was at 200 mg per day but backed off due to side effects; this has helped reduce pain a little but enough to improve my life)
Robaxin (muscle relaxant, started 2/24/06; only as needed rarely for when muscles get tight due to pain)
Elmiron (300 mg/day)

Ulcerative colitis (Dec 2002, mild):
Asacol (6/day)
Senna Plus for constipation

Depression:
Prozac (40 mg day)

Previously tried but didn't work:
Elavil (worked well for pain but could not take urinary retention side effect)
Pamelor (same as Elavil)
Flomax (took when I was on Pamelor)
Tylenol 3 (has codeine; I changed to Vicodin which worked better and did not cause constipation)

Wow, that's sounds so good! I just purchased a couple of bags of pears yesterday from Costco. I guess you know what I'll be doing when they ripen!
