Farmstyle Cottage Cheese Bread..Bread machine recipe:

I have to share this recipe! I made it this weekend and it is SOOOO good

Farmstyle Cottage Cheese Bread

Cottage cheese breads were once very familiar to home bakers in rural areas, due to the excess of fresh dairy products. Milk and starter were heated together until large curds formed, then the mixture was drained and salted. The delicate sour taste and cottage cheese make for a tender bread. WHile all cottage cheese is made from skim milk, when it is as low as 1 percent, the tub will be labeled "low fat"; that is what is called for here. Cottage cheese is excellent piled on fresh bread with jam or olives. This wonderful sandwich bread is a great keeper, staying fresh for 3 days. This dough is also suitable for making soft pretzels.

1 1/2 lb loaf

3/4 Cup water
3/4 cup small curd lowfat cottage cheese
2 tbs. olive oil

2 1/2 cups bread flour
1/2 cup whole wheat flour (or substitute bread flour)
2 tablespoons sugar
1 teaspoon gluten
1 1/2 teaspoon salt

2 teaspoons SAF yeas or 2 1/2 teaspoons bread machine yeast.


2 lb Loaf

1 1/8 cups water
1 cup small-curd lowfat cottage cheese
3 tablespoons olive oil

3 1/4 cups bread flour
3/4 cup whole wheat flour (or bread flour)
3 tablespoons sugar
1 tablespoon PLUS 1 teaspoon gluten
2 teaspoons salt

2 1/2 teaspoons SAF yeast or 1 tablespoon bread machine yeast


Place all the ingredients in the pan according to the order in the manufacturers instructions. Set crust on medium and program for the Basic Cycle; Press start, (This recipe is not suitable for use with the delay timer) The dough ball will be slightly moist

When baking cycle endsm immediately remove the bread from the pan and place it on a rack. Let cool to room temp. before cutting.
