Thumbs up Diet

OK-So I am frustrated cook-I LOOOOOOOOVE to cook, as long as I have a recipe to start with I can pretty much make anything and I love to eat (as my waistline shows) so IC pretty much sucks...but, I made a baked egg dish today that was yummy, decadent and NO IC PAIN!! I have to admit, stole it from Ina (Barefoot Contessa, my fav) but played with the spices. You just chop up fresh herbs that you like with a little garlic-poor eggs into dish that has been heated with cream and butter in it then bake for 5 min. Yummy and hubby liked as well. I just know how hard it is to find good things that different that don't hurt so thought I would pass it on. Happy Eating, and if anyone has other recipes, even if not your own, pass it forward!!!

Thanks Rhea....I find I can tollerate eggs even when I am at my worse so thanks a bunch! Jills recent pain/flare pamphlet said the whites of cheese are a natural antacid...that may be why! Thanks a bunch!!

Ooooh yes, that sounds yummy!! I know for me it was/is frustrating, I love to cook too, it's like my main hobby and I think watching Food Network is my second hobby! I agree I love Ina too, and Rachel Ray is my all-time favorite, learned so much from her!!

Could someone tell me what they use to flavor green beans. I can't have bacon, makes me flare and my neighbor has been giving me lots of beans and I'm not sure what to use.

If you can tolerate fresh garlic, I use that along with some olive oil. I will also add a bit of lemon zest and some Kraft Parmesan (in the green can) sometimes, as both of those like me, and I haven't had any problems with them. But, like I've said before, we are all different....LOL

Thanks Julie and Tracey I will try both of those and see which I like best. I can't tolerate lemon but I can try the garlic and olive oil. I love garlic.

Yep know what you mean about the lemon, have you tried just the zest? I think it's on the "may be ok" list, I do fine with the zest, but the juice doesn't like me much at all....LOL (ooh, I also add a little bit of dried thyme too, yum!)

haven't tried just the zest. I will have to try that. I'm in pain now and I think it's because I cooked those beans with bacon!

Oh yes, the evil bacon, lol . It sucks to be afraid of something simple, like food doesn't it? Yeesh, who knew food could be so darn troublesome! ARGH!

I remember I posted a question about using the zest awhile ago, and got enough replies that people did ok with just the zest it made me brave enough to give it a go. Works so well for me, I now am the proud owner of one of those great "Microplane" graters!! It gave me my lemon flavor back without the pain!

It's good to know about the zest. After 3 years it's still hard for me to believe one day I could anything I wanted, the next day I can't eat most of the things I like. Sometimes I still think I'm in denial even though I do try to watch my diet. It's awful!!!

Oh, I agree Pam, it just seems unreal sometimes!!! I've only been at this diet-thing since last November, there are still things I haven't tried yet....
