Hi there,
Found this recipe online for Spinach & Ricotta Calzone. It needs very little modification to fit "our" diet! I made it tonight & it's pretty tasty!
I'm hoping it will freeze well for those nights I don't feel like cooking:)
I used Trader Joe's Whole Wheat pizza dough and omitted the onion in the filling. I also skipped the parmesan in the filling, but sprinkled a tiny bit on top of the pies.
