Hi,
I'm about to try to make some guacamole. I won't be using lemon juice, but I wondered if anyone else has ever tried using lemon extract instead of lemon juice. Is it less acidic? I'm just going to start with avocados and garlic salt, but I sure would love some lemon.

Avacados just kill my bladder so I can't help you with a substitute recipe. I just stay far away from guacamole!! :( I loved it too!! With extra lemon to make it really tart...yummy.....

For guacamole, I just mash up the advocado and add nothing to it. Sometimes I add a touch of sour cream, but I still like it plain.
I can handle the advocados and even a little sour cream, in moderation. I've been on a taco salad kick lately. I bring in all the fixin's and just leave them in the frig at work. I, of course, have to leave the tomato out, but I still enjoy it. I just use lettuce, ground beef with a little taco seasoning, kidney beans or pinto (or both!), cheese, chives, guacamole and a little sour cream. I miss the salsa, but it still tastes good to me.

I think Bev has mentioned using lemon extract in place of lemon juice.
