Yesterday I found enough loganberries to serve them for dessert last night. I tried an experiment and it turned out to be something I'll be trying with all kinds of berries.
Here's the recipe:
2 cups berries
1/2 cup Splenda (more if it's not sweet enough)
Pinch of cinnamon
Stir until very juicy (if using blueberries, smash some to make juicy)
Add one envelope plain gelatin to 1/2 cup water, stir, and microwave for about 30 - 45 seconds
Add the gelatin mixture to fruit and stir well
Refrigerate until set
Add 1 1/2 cups Cool Whip and use a fork to stir into the mixture.
My family all loved it --- I can't wait to try it with blueberries and wild blackberries.
I also plan to try loganberries again, but will pulverize them in the blender and remove the seeds.
