I made an IC friendly (strict diet) salad this evening that was actually very good!
Salad ingredients:
Organic Baby Kale
Thinly sliced English Cucumbers (cut into semi-circle)
Finely Chopped/Diced Yellow Pepper
Finely Chopped/Diced Orange Pepper
Finely Chopped Broccoli
Organic Blueberries - from Safeway - these were as small as currants almost
Small pieces of Feta (not crumbled, but small pieces)
Dressing: Olive oil, Feta juice.
Served with a side of Sweet Potato Fries (fresh sliced sweet potato), baked and then fried in olive oil. Organic Sesame Honey Glazed Cashews for dessert! (and protein!)
