16 ounces IC friendly cream cheese, softened
1/4 pound cheddar cheese, grated(use what you can tolerate)
1 teaspoon coriander
1/4 cup organic untreated raisins(gold or brown), diced (if can tolerate)
1/4 cup dried organic apricots, diced(if can tolerate)
1/4 cup dried organic dates, diced
1/4 cup dried organic prunes, diced(if can tolerate)
1 cup pecans, chopped(if can tolerate)
Mix cream cheese, cheddar cheese and coriander until well blended. Add dried fruits and stir gently. Shape into a ball and roll in pecans. Refrigerate overnight.
Serve with wedges of IC friendly apples(such as Gala,Fuji or Pink Lady)

**Ensure dried fruit is organic and does not contain Nitrates***
