View Full Version : Any BBQ ideas?

Hi everyone,

We have a bbq this weekend and I was wondering if anyone had any IC friendly ideas. (I must add my hubby has had stomach problems since Febuary and is following the same diet as me. He has been symptom free for 2 weeks!) all we have is chicken skewers with herbs/garlic etc as seasoning and on the skewers grilled capsicum.

We would like burgers but can't face one without sauce or tomato! We have steak too...

If you mix some things in the hamburger before barbecuing it, it's actually very good. We use finely chopped mushrooms and leeks (first saute the mushroom/leek combination) mixed with the raw hamburger, then make into patties. We didn't even want anything on them, but we do have condiments available for others.

I put cream cheese on my burgers. My whole family does it now, it's delicious!

What about burgers with browned mushrooms and onions, white Land O Lakes American Cheese from the deli (or mozzarella), and avocado? You can sautee the onions/mushrooms in advance. Grilled corn on the cob makes a good side.

Grilled steaks. Baby bell peppers and mushrooms on a skewer. Serve with potatoes or sweet potatoes baked in the coals.

Beef or chicken fajitas. Guacamole made with cilantro and salt. You can put extra things like onion and tomato for the guacamole on the side. Make a pot of pinto beans in advance. Flour tortillas and corn chips. Corn and black bean salsa.

Grilled salmon with grilled asparagus,bell peppers and other veggies

Whole grilled asparagus makes a good appetizer. I steam mine first for 20-30 mins, then split in half, remove choke, coat with melted butter or olive oil and fresh garlic, then grill cut side down til brown.
