View Full Version : Potluck meal ideas?

I have a potluck at church Sunday, and I decided to bring my own meal to share with others (since at the last one all I could eat was a roll) :/

Any ideas?? Preferably something that can do well in a crock pot. I've thought of making my homemade mac and cheese or baked potato soup, but I was hoping to add a little more variety into the foods I cook for other people.

I do mac and cheese for a lot of putlucks --- it seems to be very popular. I sometimes do something like a pork loin roast in the crockpot --- very easy and also well liked. I find that it can be difficult to eat at potlucks because so many dishes have tomato.

My stand by is Mac and Cheese

If you want to add variety you can add corn to it. Or bring grated spicy cheeze on the side for people to sprinkle on ther own, or other things like that.

I wouldn't worry about it I find at church most people look forward to my Mac and Cheese, a lot of people don't have time to make things from scratch so when they get a chance to eat something made from scratch they appreciate it.

I love meatballs. You can just do meatballs cooked in a IC friendly mushroom soup. This can be done in a crockpot. It's easy and good tasting. Easy meatball would be beef,pork onions if you can tolerate, egg,IC friendly breadcrumbs and spices. You can add some cheese to the meatballs if you want a little more flavor. I would add feta or cream cheese. I would then plop them in the crocpot pour soup over and let cook.
You could also do a cheeseball with crackers or pita chips.

I buy pork tenderloin roasts. Put the roast in the crockpot, add a cup of water, salt to taste, and some slices of leek and 2 bay leaves. Put the lid on tightly, turn the pot to high and forget it for at least several hours. Remove and discard the bay leaves before serving. The pork just pulls apart with a fork and tastes wonderful.

Thank you so much, Donna! I adore pork, but with all the stuff I can't have now.. I had no idea how to make it ;) I love it with tons of onions and bbq, etc. so it was hard to wrap my mind around a new way to make it. Think I may try your way tomorrow night =)
