I have some slices of grilled chicken for something else I'm making and won't use all of them. I'd love to have chicken salad, but vinegar products bother me. Does anyone have an IC friendly chicken salad recipe? I don't know what to use in place of mayo.

I frequently use Laughing Cow cream cheese to help hold ground meats together. When I make tuna or chicken salad, I use only a tiny bit of mayo, but it would be okay with just the cream cheese.

i mix mine with cream cheese. i can do mayo now, but couldn't in the beginning i used the cream cheese. i really like it with garlic and dill for flavor.

Have you tried Veggenaise? You can get it in the refrigerated section at your local health food store or at Whole Foods. It works for me.

I toss grilled chicken with chopped raw zucchini, Knudsen 4oz cottage cheese, rotini pasta, with a sprinkle of garlic & dill for a pasta chicken salad. It's good warm or cold, over romaine lettuce.

Thanks for all the great suggestions! I haven't tried Veggenaise. We don't have a Whole Foods anywhere near us. Our health food store is more herbs and stuff, so I'm not sure I could find it.

I'm thinking about trying either cream cheese or cottage cheese. Cream cheese is so thick. Do you do anything to thin it out? For the cottage cheese, do you put it in the blender a bit to de-chunk-ify it?

I've never made chicken salad and I'm not so good at cooking without recipes. Sorry for so many questions!

When I've tossed it in the salad, I've not done anything to it. Oh, I forgot, I also add feta cheese so it has a bit more flavor.
