View Full Version : Leftover chicken from crockpot broth

Someone here recently commented that when they make chicken broth in the crockpot, the chicken meat comes out kind of dry & flavorless. It does for me too, so this is what I've been doing with that leftover chicken...

•Mix it with Safeway Organics Pinto beans, heat it up with a sprinkle of garlic & oregano, and serve it on rice with shredded mozzarella cheese. Or Trader Joe's makes taco shells & corn tortillas without problem ingredients, you could put the chicken, beans, shredded cheese in there with some shredded lettuce. A little Philly light cream cheese (block, not tub) substitutes for sour cream. If you can tolerate it, you can also mix a little Marie's Lite Creamy Ranch dressing with a little milk to thin it & you can drizzle that on top of the lettuce.

•Heat up some rice with a spoonful of olive oil in a skillet, add the chicken, thin sliced mushrooms, a sprinkle of garlic & dried basil, and a handful of spinach. Add a splash of chicken broth to the hot pan, it will sizzle. Put a lid over the food & let it steam under there til the the spinach is wilted, then sprinkle some crumbled feta cheese on it & toss it lightly. You can add a little parmesan as well if you can tolerate it. I can only tolerate the one in the can that has the cellulose added. Nobody without IC seems to like that one, but it's great for me because it makes it more mild than the aged parmesan.

•Make a sandwich with the meat, thin sliced red bell peppers, spinach or lettuce, and a little Philly light cream cheese (block, not tub- the tub has acidic preservatives). If you're ok with it, you can add a tiny bit of the Marie's Lite Creamy Ranch salad dressing to the cream cheese for a bit of flavor.

•You can add the meat to cooked pasta. I like the Trader Joe's "Just Pasta" for this on a weeknight, since the pasta's already cooked & you just put it in the microwave for 3 minutes. But, any pasta is fine. I put the shredded chicken with the pasta, steamed vegetables, then toss it with a little oil & some feta & parmesan. Or, if I feel like cooking a bit more, I make a bechamel sauce. Here's the IC friendly recipe from My Food Style, a website of IC friendly recipes created by a chef just for us!
