View Full Version : Vegetable Chicken Pie

Cook Time: 40 minutes
Ingredients:
• 2 cups chopped broccoli or cauliflower, or a combination(cooked)
• 1/2 cup chopped onion(if can tolerate or use green onions/chives)
• 1/2 cup red pepper
• 1 cup shredded cheddar cheese(mild is the most tolerated)
• 1 1/2 cups milk
• 3/4 cup Bisquick
• 3 large eggs
• 1 teaspoon salt
• 1/4 teaspoon pepper(if can tolerate)
• Cooked chicken
Preparation:
Heat oven to 400°. Lightly grease pie plate ( I use my deep dish pie pan ). Combine broccoli, onion, red pepper, cooked chicken and cheese in the pie plate. Process remaining ingredients on high speed of blender for 15 seconds, or until smooth. Pour mixture into pie plate. Bake 35 to 40 minutes or until golden brown and knife comes out clean. Let stand 5 minutes before serving. Garnish as desired. serves 6.

**can add any other veggies as desired**

Julie B I love to eat so I'm always looking for things I can make. I hope my recipes are helping people feel less deprived.

Would mozzarella work instead of the cheddar?

I am sure mozzarella would work just fine. I would probably also add some Feta in there to give it a little extra zip. You could also add a little cream cheese or goat cheese. I love cheese and there could never be too much cheese in a recipe to me.

Kadi I made it tonight with Mozzarella,cream cheese and feta and it turned out delicious. Just thought I'd let you know.

I didn't measure it but I guess about 1/4 cup of Feta,1/2 cup cream cheese and about 1 cup mozzarella. Like I said before the more cheese the better. I'm going to have this for lunch today with a salad(olive oil and seasoning dressing). I'm looking forward to it:dance:

Mspinosi you can put as much as you like because it all binds together but a good guideline is about 1 cup.

Wow, this is an amazing recipe. I've already served it several times, once I made it from start to finish within about 50 minutes of my daughter coming for lunch! She loved it so much that she makes it too and her little 7 year old son (who we watch while parents are working) loves it also. I save my recipes in Word, add a photo, print and put in a sheet protector. Then I put it in my Recipe binder. The presentation is lovely. This would be so easy to serve to a group, using several pie plates.

Thank you so much for sharing. I'm looking forward to trying more and more recipes! This one is already circulating among our family/friends...and they don't even realize it's IC Friendly until we let them know.

nanawaggs I'm glad you and your family are enjoying the recipe. Having IC can make me feel really deprived so I know when I can create something I like that is IC friendly it's always a good day!
