Ingredients for Pasta Salad
• 2 skinless, boneless chicken breast halves(cooked)
• 1 (16 ounce) package uncooked farfalle (bow tie) pasta(or any kind you want)
• 1/2 pound cooked cocktail shrimp
• 1 (2.25 ounce) can diced black olives, drained(make sure IC friendly)
• 1/2 cup baby carrots, chopped
• 1 cucumber, diced
• 1 (6 ounce) package feta cheese, crumbled
• Seasoning to taste

Directions
1. Cut chicken into bite size peices
2. Bring a large pot of lightly salted water to a boil. Add farfalle pasta, cook 8 to 10 minutes, until al dente, and drain. Cool to room temperature.
3. In a large bowl, mix the chicken, pasta, shrimp, olives,carrots, and cucumber. Toss with feta cheese, and season as desired.
Serve with Cucumber Dressing



Ingredients for Cucumber Dressing
2 small pickling cucumbers, peeled, seeded, and diced
1/2 teaspoon salt
2/3 cup plain yogurt(if can tolerate)
1/2 teaspoon minced fresh mint leaves
1/2 teaspoon minced fresh dill

Directions
Place the cucumber in a colander, sprinkle with salt, and allow to drain for 15 minutes.
Mix the yogurt, mint, and dill in a bowl. Stir in the drained cucumber. Chill at least 30 minutes before serving.

This dressing is also good for putting in wraps or as a salad dressing.

*if you can't tolerate the yogurt you can try sour cream or kefir if you can tolerate those BE CAREFUL YOGURT,SOUR CREAM AND KEFIR ARE ON THE TRY IT LIST*****
