I think I posted this soup recipe a while back but may have left out some steps I dk. Anyway I finally got around to making it tonight and it was even more delish than I remember the last time I made it which was years ago...I used to live off of it in college! Goes great with the dark just barely sweet molasses quick bread. Tasty healthy IC safe meal for cold winter evenings. :)

Gypsy soup (makes 4 large bowls)
olive oil
1 sweet potato cut in 1 in chunks**
1/2 onion or 4 green onions cut in 1 in chunks*
1 clove garlic sliced *
2 stalks celery cut in 1 in chunks
4 cups chick or veg broth or water
1/2 can garbanzo beans (drained and rinsed)
1 zucchini sliced lengthwise and then cut in 1 in chunks**
1/2 tsp turmeric***
1 /2 tsp dried basil
1 bay leaf
1/2 tsp cinnamon or pumpkin pie spice

*leave out onion/garlic if you aren't sure about those.
**any green and orange veggies will do (carrots & snow peas or butternut squash & fresh green beans)
***if you don't have turmeric in your pantry no big deal to leave it out...it adds color but not too much flavor

Sautee veggies in olive oil for 5 mins. Add broth/water, garbanzo beans, zucchini, and spices. Cover and simmer for 10-15 mins til veggies are done.

Whole wheat molasses bread (makes one bread pan or six Texas sized muffins)
1 3/4 cups whole wheat flour
1/2 cup all purpose flour
1 tsp salt
1 1/2 tsps baking soda
1 large egg
1/4 cup sugar
2/3 cup molasses
1 1/2 cups buttermilk or milk

Preheat oven 375
Grease pan

Mix the flours, salt, and baking soda in a large bowl. In another bowl whisk egg, sugar, molasses, and milk until well combined. Add egg mixture to flour mixture and combine until everything is well blended. Pour mixture into greased pan and bake 40-45 mins for a loaf and 25-30 mins for large muffins.

(i have no idea if molasses is considered IC safe??? first time I have cooked with it since IC. For those who can't tolerate whole wheat then sub more all purpose flour)

Oh my...This sounds like something I will have to make very soon. Hubby likes soup and quick bread, also. I think these absolutely have to be scheduled to be supper in the near future.

Which do you like best...Cinnamon or pumpkin spice?

I have used cinnamon in the past but was out this time so used pumpkin spice and gotta say loved the pumpkin spice.... gave it a bit more "depth" lol. But really either will do.
Let me know how it turns out. The bread yes is quick/easy and very tasty! savory and hearty lol
Just a really good combo.

Oops I noticed a mistake on the amount of milk and just now corrected it....
