1/2 cup pumpkin puree
2 cups milk
2 tablespoons white sugar
1/2 teaspoon pumpkin pie spice
1 teaspoons vanilla extract

Combine pumpkin, milk, sugar, pumpkin pie spice, and vanilla in a saucepan over medium heat. Use a whisk to blend well. Heat to a simmer; do not boil.

variations:
substitute 1/4 cup maple syrup for the sugar (reminds me of my mom's pumpkin pie)

add 1/2 cup double strength low or no acid coffee and increase the sugar to 3 tablespoons

Pumpkin pie spice is a blend of cinnamon, ginger, nutmeg, and allspice. You can buy it in the spice isle at the grocers or mix your own

I do this also, but use cinnamon instead of the pumpkin pie spice. I also find that lowfat milk is much better than fat free in this, makes it creamier. For added help with regularity, I put a teaspoon of Metamucil Clear & Natural inulin powder in it...
