View Full Version : Banana Blueberry muffins

This is a fantastic muffin recipe. It is very versatile you can make it just with blueberries or just banana or both. If you can't tolerate bananas as some IC patients can't you can just use blueberries the batter will be firmer but don't worry the muffins will taste good.

3 large Bananas(I often use 4 or 5)
Blueberries as many as you want I use a ton.
3/4 cups white sugar(you can use a little less if you want I usually only use 1/2 cup and add more bananas)
1 egg(or two egg whites)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cups flour
1/3 cups melted butter(or margarine)

Mash banana. Add blueberries,sugar and slightly beaten egg. Add melted butter. Add the dry ingredients

Bake 375 for 20 mins.

Put the muffins in a container overnight and you won't believe how moist and tasty these are.I always double or triple the batch.

This recipe is so versatile because you can make whatever modifications you want as outlined and they still turn out great. Enjoy! I eat these for breakfast almost everyday

Variation:You can also do banana and white chocolate chips.

Hey Carole,

I made your banana blueberry muffins today, yummo... they were delicious. I added part wheat flour in place of some of the white flour. Very good thanks for sharing this recipe. :lmao:

I made your banana blueberry muffins today, yummo... they were delicious. I added part wheat flour in place of some of the white flour. Very good thanks for sharing this recipe. :lmao:
Thanks I also made this recipe lastnight but I made just banana and then I added white chocolate chips. I have also made it using wheat flour. Did you wrap them or put them in a container overnight. They are even better the next day because by then the banana flavor has gone through and they are super moist:-)

oooh... those white choc chips sound delicious also. I will have to try those next time. I used muffin liners, only because I had cute harvest ones. I put six in the freezer so that I can pull them out and send them to school for my daughter. The rest are already gone. Thanks a bunch.

Did I read on another post that you are in a flare? If that was you, I am so hoping you get better soon. It is so frustrating. Happy Thanksgiving!

Yes I am in a flare but it may also be an infection I'll find out today. Either way I am having bladder issues. This is my first full flare since I started with this whole problem 8 months ago so I guess I have nothing to complain about but I still feel like a bus hit me. Glad you enjoyed the muffins:-)
