I haven't had cake since this whole thing started last March, but I finally got the recipe, the energy, and the time to make one. It's HUGE, but it only took 3 days for 4 of us to kill off.

Alton Brown's recipe:

Note: I used an old electric beater instead of a food processor. Worked fine and less cleanup.

Recipe video on YouTube. Recipe starts 6:30 minutes into the clip. Highly recommended if you want the cake to come out right.

It's so weird you posted this! I was JUST talking to my boyfriend about carrot cake and was wondering if it was IC friendly. I'm definitely going to try this.

did you substitute something for the yogurt or are you just okay with it? If you did substitute, I would love to know what you used!:)

It's a 6oz container of yogurt, cooked in several pounds of cake containing baking powder and baking soda, so I just chanced it. A lot less risky than the additives our local baker uses, IMHO.

Hope it works for everyone else.

(I doubt is would cause a problem to use milk instead if anyone is worried.)

I love carrot cake! I will have to try this recipe. Not sure what could be used to replace the yogurt though. Maybe it would be ok since the amount is so small. I would probably chance it too. Although, not sure if I should chance it while preggers..... I'm having enough of a flare just from that!
