Today is the last day of summer vacation & though I really wanted to run away somewhere, I decided to spend the day making life easier for the next few weeks. So, today is cooking, cleaning & lesson planning.
Here's what I cooked, maybe it will give someone a few ideas:
1. The Lazy Sunday Pot Roast from the Confident Choices cookbook.
2. Carrot soup (figured I was peeling carrots anyway for the potroast) made from chicken broth & carrots, a sprinkle of dill weed. Bring to a boil, lower to simmer 1/2 hour, blender to cream it, cool, then fridge before freezing.
3. Chicken patties: ground chicken mixed with crushed saltines, egg white, sage, garlic & salt. Pan cooked in olive oil spray. Cooled & frozen.
4. Chicken, brown rice: Heat olive oil in a pan, add ground chicken, thin sliced mushrooms, thin sliced baby zucchini, sprinkle of rosemary & salt. When browned, add beaten egg & cook until egg is done. Mix with cooked brown rice. Cool, then fridge, then freezer.
I bought a meat grinder attachment for my KitchenAid stand mixer. The ground chicken & pork at the store contains additives, so this will hopefully add a little variety to my meals.
