View Full Version : Crusted Chicken with Cream Sauce (Lite)

This dinner was awesome! My whole family loved it! This is definitely a recipe I'd make for guests!

Ingredients:

15 Ritz crackers (reduced fat)
1 tbsp parmesan cheese
1 tsp garlic powder
kosher salt, to taste
black pepper, to taste
1 tsp olive oil
8 chicken breasts (skinless, boneless), pounded and halved
1/2 cup fat free chicken broth
3 ounces fat free cream cheese (cut into small cubes)

1. Mix cracker crumbs, parmesan cheese, garlic powder, salt, and black pepper on plate and set aside.
2. Rinse chicken with cold water, shake off excess. Dip chicken in crumb mixture, turning to evenly coat with crumb mixture.
3. Heat oil in large nonstick skillet on medium heat. Add chicken and brown on both sides. Transfer to stove and bake at 325 till cooked through (170degrees).
4. Add chicken broth and cream cheese to skillet that was used to brown chicken. Cook on medium heat until mixture boils, stirring constantly.
5. Reduce heat to simmer and cook 3 minutes or until sauce is thickened, stirring frequently.
6. Spoon sauce over chicken and sides (good over rice or pasta), and garnish with chives.

Great recipe! Just make sure to buy cream cheese in the block form (tub has preservatives) & chicken broth without MSG!

Pacific chicken broth is natural and doens't have any celery or carrot juice in it, for those who also have to follow the low-oxalate diet. They also make all-natural beef and veggie broth.

I didn't know that about the cream chees tubs...I guess I never looked. Great to know!

Is chicken broth and Ritz ok to eat if I'm new to the diet? The recipe sounds yummy!!!!

I'm not ok with Ritz crackers, but some IC patients are.

For a chicken broth, you can make your own (the crock pot is great for this) or try to find a brand without MSG. For me, I have to make my own broth because all the canned ones contain onion powder which is a big trigger for my IC.

sounds good! i am okay with a canned broth I found and Ritz crackers.
