I thought this would be fun and we might be able to get some ideas from each other for some meals! You don't have to post breakfast, lunch, and dinner. You can post just one meal if you want!

But let's all remember that everyone's different! What one person is able to eat, others may not be able to tolerate! If you are unsure about anything refer to the list from the site here: http://www.ic-network.com/diet/dietcheatsheet.html

Well, since I've had all three meals and I feel like I had a good days worth of food (haha) I will post mine.

Breakfast: Homemade blueberry pancakes topped with homemade whipped cream

Lunch: Homemade gnocchi with a brown butter sage sauce on a bed of wilted kale with some toasted homemade bread with herbed butter!

Dinner: Vegetable soup made with some of my homemade broth! The soup had carrots, mushrooms, kale, fresh corn, green beans, chickpeas, and I added in a little pesto to deepen the flavor a little. (Still miss tomato in my vegetable soup but whatever!) Then I toasted up some of the homemade bread I made today to make some croutons to eat with my soup.

Oh yeah, post pictures if you want! I don't know if there are any other food nerds out there but I love food photography and blogs! If anyone else is interested in this thread, I might start taking pictures of my food to post in here. haha

For breakfast I had a bowl of cheerios. Lunch was a peanut butter sandwich. I'm just ready to fix dinner, which will be pan grilled chicken breasts, mashed potatoes with gravy, green beans, and cantaloupe.

Boy do I need help with this topic. Sometimes I just can't figure out what to eat. Your homemade blueberry pancakes with whipped cream sounds heavenly. I never was creative with food, and now that I have IC even less. For breakfast I had the Dole fruitpack pears, and a blueberry muffin. I never eat lunch, and for dinner a very good grilled hamburger with corn on cob. I'm looking forward to what everyone else comes up with. Maybe it will inspire me to do better.

Breakfast; egg and broccoli omelet, teeccino with milk

Lunch: chicken grilled with zuccini squash, blueberries, teeccino with milk

Dinner; grilled red cabbage with cauliflower; steamed bok choy; steamed sweet potato, teeccino with milk.

I want your recipe for homemade blueberry pancakes, please!

Today, July 20th

Breakfast:
•2 slices of Trader Joe's cinnamon bread toasted, with Land O Lakes spreadable butter with canola

Lunch:
•1 whole egg, 1 egg white scrambled with 1/2 cup of cauliflower, 1/2 cup of broccoli & 3T mozzarella cheese
•4 boiled new red potatoes

Snack:
•Too many Trader Joe's vanilla meringues!!!

Dinner:
•3oz hamburger patty (95% lean)
•2 cups spring mix salad w/1tsp Marie's Lite Creamy ranch dressing
•1/2 cup brown rice (Trader Joe's organic brown rice, freezer-3 minutes in the microwave!)
•1/2 pkg Trader Joe's baby zucchini sauteed in olive oil with basil, garlic, oregano, sea salt

I was BAD and ate out for both breakfast and lunch today lol but luckily had some IC safe-for-me meals! This was NOT a normal eating day for me but it was all soooo good:)

Breakfast: Huevos Rancheros sunny side up at a restaurant that makes a great ranchero sauce that I can tolerate (I can have ranchero sauce IF it is made w/ fresh tomatos and fresh chiles...NOT canned or pickled), refried beans, hashbrowns, corn tortillas,water (Note from ICNDonna: Please don't try this breakfast if you are diet sensitive. Many ICers cannot tolerate tomatoes of any kind --- and the chili peppers would put me in bed with pain.)

Lunch: crab chowder, saltines, and a green salad, lots of water

3pm slump snack: small snack-size pack of Lay's tater chips...more water...oh yeah, and a couple of peanut butter cookies (I dk why??? don't like potato chips or cookies, don't like peanut butter...but there were some at work left over from a meeting last Friday so I ate them:rolleyes:...luckily I didn't react b/c peanut butter is a trigger for me)!

Dinner: skipped...not hungry:)

PS>>after all that eating out and junk food snacks, I went by the local Curves gym after work to see about a membership:lmao:am going to join when next paycheck comes around...it is really nice and cold a/c in that place, I was SOLD lol, it has been SOOO hot don't even want to go to beach after work to swim!!!!!

B: puffed corn (org.) w/ a little milk

L: pear, oatmeal w/ sprinkle sugar and pres.-free dates

D: zucchini and green peppers and eggs

a little boring but it got the job done. :)

My jaw is dropping that you can eat olives!! I LOVE them. Are they a "usually ok" food? I would love to try them as I miss them a lot. I love black and green. Any particular brand you get?

Here's the recipe for the pancakes someone asked for.

-1 cup flour
-1 tablespoon sugar
-1 tablespoon baking powder
-1/2 teaspoon salt
-1/2 teaspoon oil (i usually use canola)
-milk (Any kind of milk works. Cow's milk, rice milk, soy milk [doubt anyone can tolerate much of that], almond milk and I have even used water when I didn't have any milk at all. A little more bland but still worked.)

Combine flour, baking powder, sugar and salt in a bowl. Add oil and stir until combined. As for the milk, I just add until I like the consistency of the batter. It depends on how thick or thin you like your batter, really. Just be careful not to overmix because your pancakes will be tough!

These can easily be made into blueberry pancakes, too.


I am currently baking a blueberry coffee cake! Never made it before so I'm hoping it turns out well! Mmmm!

Ophelia, I'm not the best example, since I can eat many things on the probable lists, especially since I've been on Elmiron. But yes, I can eat a variety of olives; I don't buy jarred or canned ones, just get them in bulk at the places I usually shop. I don't buy ones that are heavily marinated in herb mixtures or obviously doctored.

Mmm, love pancakes. For blueberry pancakes I find a batter that is thick and gets puffy is best, since it provides more territory for the berries.

This is what I had today:
Breakfast: I usually eat oatmeal (instant-eat it on the run while getting settled at work)with milk. Sometimes instead of the oatmeal I will go down to the cafertia and get some eggs and toast.
Lunch: usually left overs- today is meatloaf with corn and mash potatos
Dinner- I have a roast that one of my son's will put on when they get home, along with potatos, green beans.
Snack (around 9:00) a glass of Ensure (vanilla) (doctors orders because of unexplained weight loss

I mainly eat what I want but I really avoid the very citric acidic foods. Such as lemondade etc.

Yesterday:
Breakfast: 2 slices of raisin bread with LandOLakes Spreadable butter with canola
Lunch: 2 slices french toast made with whole wheat bread, egg, egg white, milk, cinnamon , Pam canola spray, & 100% maple syrup
Dinner: Steak, rice, milk, 1/2 baked potato, salad, vanilla ice cream, blueberries.
Snack: 2 vanilla meringue cookies

Note to self: EAT MORE VEGGIES! Not an ideal weight watchers day by any means, but hey, I'm still down 11-1/2 pounds... 23-1/2 to go...

For breakfast: An english muffin with some cream cheese (square, not tub). An egg whites omelet with green peppers and mushrooms (a little canola in the pan) and a piece of Boar's Head white cheese inside too. Teecchino with a dash of sugar and a bit of organic half and half.

For lunch: A roll that I made in my breadmaker. Some fancy green lettuce on it (can't think of the name of it) with some Boar's Head Turkey and Boar's Head white cheese. A couple of Fritos (very good and only corn in it. Check the ingredients label) on the side. A cup of mint tea and a sliced pear.

For dinner: Some brown rice with a speck of butter on it. Fresh brocoli. Some Perdue chicken tenders that I cooked on my George Foreman grill (comes out nice with grill marks and all) seasoned with some garlic and some basil.

It goes without saying, plenty of Evian water, drinking it all day long. Water, water, water.

Later I will probably have a piece of watermelon cold from the refrigerator. It's hot here.

That's it.

Oh, by the way. Thanks for the blueberry pancake recipe. I have the blueberries and I am going to try it tomorrow. Sounds delicious.

Breakfast : Scrambled egg white (anti-inflammatory) with mushrooms (anti-inflammatory) and parsley (anti-inflammatory and anesthetic ).

Lunch : Pasta with homemade Pesto sauce and feta cheese strings on top.

Dinner : Fatty Fish (wild salmon, sardines, mackerel, black cod, sablefish ) as an anti-inflammatory with green salad (lettuce, broccoli, sugar peas and cucumber) as a source of magnesium to relax muscles.

Snack: quaker rice cakes salt free, almonds or tapioca pudding.

By Friday we usually have a lot of odds and ends in the fridge and a dearth of veggies. Today was a good example of thoroughly unbalanced eating:

Breakfast: toasted leftover cornbread, peppermint tea.

Lunch: bowl of multigrain flakes and shredded wheat with milk and a few pathetic looking over-the-hill blueberries

Snack: bowl of organic popcorn

Dinner: edamame, rice salad that included poached chicken, celery, onion and fresh peas, dressed with a tiny bit of dijon mustard and olive oil and chopped parsley at the very end of its life. Yes, I can eat mustard, in moderation.

Lunch> I try not to eat lunch, so nothing today.
Dinner> Fried Catfish, Hushpuppies and Coleslaw.. Can only eat coleslaw when I take prelief ..

Lunch: 2 scrambled eggs & a blueberry muffin, 4 Prelief tablets
(restaurant food)

Dinner: Cooked penne pasta with 1 link of chopped Jones Natural sausage (I can get away with 1 link as part of a meal), tossed with lowfat cottage cheese; steamed zucchini (I'd planned a salad, but it was slimy when I opened the package- I hate that!)

Snack: Hagen Dasz Brown Sugar Ice Cream, 100 cal pack Lorna Doone Cookies

I've been working on a pear muffin recipe so we've all been enjoying those.

My IBS has been acting up, so I've been eating a lot of simple carbohydrates. Not gaining weight, but I have to really fight to keep from falling asleep after meals.

Breakfast - Quaker Oatmeal with Brown Sugar and Maple Syrup (100% maple), Egg Whites + Milk

Lunch - Brown Rice with chopped broccoli, garlic, thyme, cauliflower, sea salt, and mozzarella cheese. Also had 2 homemade sugar cookies with icing!

Dinner - Hamburger on a preservative free white bun with mozzarella and fake ranch dressing, steamed corn + sea salt

Dessert - Breyers All Natural Vanilla Ice Cream

Lunch: Didn't need one after eating enormous breakfast

Yesterday a.m. I got a huge flour tortilla togo with refried beans, potatos, Land O'Lakes american cheese from my fav mex restaurant that I can only get breakfast from on Saturdays since it is closed Sunday and during the week I am at work during their breakfast hours. It was huge so made three meals of it and it lasted me thru breakfast lunch dinner. I am trying to starve myself today after consuming all that fat/calories...but ohhhhh was it sooooo good!:) Good thing they are closed Sundays!!!

Boy, you guys make me want to come to your houses to eat! My meals are downright drab!

Breakfast: none

Lunch: Sandwich using last night's left-over roasted chicken, lettuce & butter on the bread.

Dinner: (Which I'd better get started on) will be a grilled pork chop, corn on the cob, and a piece of garlic bread. A bit of vanilla ice cream for dessert.

Heat wave time in the East Bay! Cooking is out the window, but my husband actually managed to bake bread before the kitchen became unbearable.

Breakfast: onion bagel and cream cheese and a peach
Lunch: root beer float w Haagen Dazs vanilla bean ice cream
Dinner: BLT* on toasted corn-white bread, sides of cucumber and orange honeydew.

*Used two teensy weensy slices of tomato. Don't try this at home! Most ICers don't go near tomatoes, and I don't eat them as a rule, either. It's a test and slightly reckless; it's more tomato than I've eaten in about a year, and I'm not planning on pushing my luck if I have no problems with it.

I should probably add that root beer and peaches are not tolerated by many ICers. I don't drink soda or carbonated beverages as a rule, but once in a while a root beer is okay for me.

The onion bagel, the peach, the rootbeer & the bacon would all combine to kick up my IC . I'm happy you can eat those things though:) I wish I could too!

My window unit air conditioner is sounding like an airplane it's working so hard...

Here's what I had:

Breakfast; Bowl of instant Oatmeal (Cinnamon Roll Flavor),with 2% milk
1 cup of coffee (as long as I have one only I am good-no problems)

Lunch: Sweet potato with cinnamon (or at least that is what I will be having)

Dinner: Family is in luck today- I will actually cook something-
Pork Chops/mash potatos and veggie of some sort.

usually go to the store and buy all of this food, but after work I don't have the energy to cook-besides here in Texas its HOT!HOT! HOT!! Lately its been around 105 degrees but today its suppose it be cool- only 100 degrees.
We had a little (very little in fact) rain yesterday - first time in way too long, the lakes are way down, and we are on Level 3 for watering (which doesn't really bother us as we don't water the yard.

Breakfast - Whole wheat english muffin, egg white, american cheese

Lunch - Bowtie pasta with chicken and broccoli in light creamy sauce

Snack - almonds, gala apple

Dinner - I will have turkey burger on wheat, side salad with lots of cucumbers! (My favorite).

I saw the movie Julie and Julia last night and between that and this thread about food, I feel a binge coming on!

Breakfast - Oatmeal (Old-fashioned Oats) w/ raisens, flaxseed oil, and slivered almonds (I eat this probably 5 days a week and I love it!)

Lunch - Salad (lettuce, broccoli, peppers, spinach, feta cheese, sunflower seeds, almonds) w/ Annie's Organic Green Garlic Dressing (vinegar-free)

Snacks - pear w/ almond butter (I eat this day after day), raspberries, honeydew

Dinner - Baked Chicken, peas, sweet potatoe

Snacks - 1/2 cup applesauce w/ bran, cheerios

**Today was a boring healthy day. Yesterday was more fun.........with ice cream and tortilla chips.

Breakfast: Nature's Path Honey'd Cornflakes & nonfat milk
Lunch: Fresh Choice - Massive plate of salad with lettuce, kidney & garbanzo beans, hardboiled egg, cauliflower, broccoli, zucchini, yellow squash, shredded carrots, rotini pasta, ranch dressing on the side (dipped fork in it before bites of salad & took 4 Preliefs),
Breadstick with butter, baked potato, soft serve vanilla ice cream cone
Dinner: (Embarrassed) - White chocolate Kit Kat (in response to serious PMS craving!) Fortunately the tiny amount of "real" chocolate in between the wafers doesn't bother me...

Breakfast: Toast, and then another kind of toast. Peppermint tea.

Lunch: Rice salad with tuna, roasted red bell peppers, edamame

Snack: Grapes

Dinner: Chicken on the grill, sauteed okra served over sliced farmers market tomatoes (well, I skipped the tomatoes) and fantastic corn fritters made from really sweet corn, also from the farmers' market today.

We rarely have dessert, and I actually made one this evening, but we are all too stuffed after the fritters to even think about it. It looks lovely, though.

I could get into a Kit Kat for dinner. You ate it on your grandmother's china with a knife and fork, right? Accompanied by a lovely wineglass full of milk with a crisp clover nose and a hint of fertilizer. I had no idea a white Kit Kat existed.

These fritters are like puffy fried corncakes; carnival on the outside, fluffy cloud of corn inside. There's nothing in them but white flour, a little cornmeal flour, eggs, milk, a very little bit of sour cream or yogurt, and fresh corn. I use 2% milk and 2% Fage yogurt, but I am guessing ricotta could substitute, if someone couldn't tolerate the sour cream or yogurt. But they are fried, and are not exactly a greaseless treat. The recipe for them calls for a roasted tomato salsa, but of course I eat mine plain. They would also be great for breakfast, with maple syrup.

Breakfast: Toasted home-baked 1/3 whole wheat bread with cream cheese

Snack: Another slice of bread with cream cheese, peanut butter, and orange blossom honey. Iced teechino.

Dinner is cooking.

Roast duck stuffed with 5-spice-rubbed half-pears, glazed with warm pear juice, honey, and pear preserves, and basted with pear juice and gran marnier.
Steamed parsnips and red bell pepper, sauteed with baby bella mushrooms and green onions.
Wild and brown rice cooked in home-made chicken broth.
I'll probably drink water with some pear juice and ice.

Gotta go baste!

Everybody, quick! Dinner at Mrs. Peel's house!

My day:
Breakfast: Bisquick biscuit with LandOLakes spreadable butter with canola, Wild Oats blueberry jam

Lunch: 1/4c honeydew melon (6 hours later & still ok! That was a new food for me.), cottage cheese. Due to fear of the melon experiment, 4 Prelief tablets.

Snack: Peppermint candies (Bob's Sweet Shop - bought a big bucket of them at Costco)

Dinner: Baked chicken (Brushed chicken pieces with melted canola butter, sprinkled them with fresh ground sea salt, sage, thyme, a tiny bit of garlic powder), white rice made with chicken broth, steamed vegetables, glass of nonfat milk
Dessert: Leftover blueberry pie filling (homemade, extra from baking a pie a few weeks ago, froze it in 1/2c tupperwares) with 2T Dreyers SlowChurned vanilla ice cream

My day:
Breakfast: none

Lunch: A bowl of homemade cream of potato soup and wheat saltine crackers. Glass of 2% milk.

Dinner: Baked chicken (brushed with butter and sprinkled with thyme, sage, parsley, coarse black pepper, and garlic salt). Baked potato, and corn on the cob. Glass of 2% milk.

Dessert: Vanilla ice cream

Wow Emma Peel, where do you get the energy. Isn't it too hot to cook like that in the Florida Keys? Sounds awfully yummy. It's hot here. I could barely get it together to make braised summer squash.

Breakfast: toasted baguette with butter and tiny bit of marmalade

Lunch: Barbara's organic shredded wheat mixed with multigrain and flax flakes with a beautiful peach and delicious organic milk. Still, we're talking cereal for lunch.

Dinner: Nothing even remotely like roast duck. Lots of multi-colored patty pan (flying saucer) squash and round yellow squash braised with onion and a little bacon. Very southern. Should have made some cornbread to go with, but too hot to use the oven. And for dessert, buttermilk ice cream made by my talented husband.

Thanks for the praise, ladies, but I don't pull out all the stops more than once a week, and the last time I roasted a duck was back before Roseanne Barr was famous. I knew I was bragging, but I couldn't help myself :evilsmile

I am really getting some excellent ideas from these posts and look forward to trying some of the combinations myself. We have gotten so creative, and thanks for sharing!

One discovery I've made is that you can make oatmeal in a rice cooker if you leave the lid off and don't mind a little browning on the bottom.

Today

Breakfast: Homemade bulgur wheat muffins and Iced Pero.

Lunch: Cream cheese, sunflower butter, and honey sandwich, water.

Dinner: Stir fried chicken bits, green onions, and zucchini over organic spaghetti. blueberries.

Late snack: Mint "5" ice cream, ripe pear.

Breakfast: Woke up late & forgot about it
Lunch: Roast beef (Hormel Naturals), 1 slice Sargento Mozzarella cheese on a baguette; 1/2 pear; nonfat milk
Snack: 1 small slice of "Basque cake" (bought it at the farmer's market - a rich butter cake)
Dinner: Chicken wing (left overs) brushed with melted canola butter, thyme, sage; brown rice, corn on the cob w/canola butter & salt.

Breakfast: shredded wheat and multigrain flakes with milk and part of a nectarine. Borrring peppermint tea, as usual.

Lunch: edamame, corkscrew pasta with greenbeans leftover from dinner.

Snacked on Jordan almonds.

Dinner: dessert first! Dunno what came over me, but I baked a simple cake with raspberries and it was better than I thought it would be. I couldn't resist a little slice when it was still warm. Then we had Greek lentil mezze (lentils, variety of veggies, cooked in a melange w/olive oil and eaten room temp on crackers) and grilled salmon (wild King salmon--a splurge!) and I had a few sips of white wine. Looking forward to another piece of cake later!

Yesterday:

Breakfast: My husband's home-made multigrain toast. Even when it's stale it's better than almost any other bread!

Lunch: Sort of a cross between home-fries and hash. Leftover parboiled fingerling potatoes sauteed til crispy with onion, green bell pepper, garlic and a little bit of ham. Orange watermelon.

Dinner: Apps: olives and sliced raw kohlrabi and carrots. Fresh from the oven cornbread and sauteed okra with garlic. My husband had grilled sausages, but I felt like vegetarian. He had his okra over fresh tomato slices, but of course I had mine without. Sad; it was a beautiful tomato!

Ok- after reading thru most of this I am getting hungry again (just had lunch about 30 minutes ago (had left over meatloaf/mash potatos/green beans); yes I do cook every once in awhile. Like I mentioned in another post I buy all this food and just do nothing with it and when I cook (like this weekend--I actually cook from Thursday (8/27 to Sunday) my eldest son wanted to know if I was ill or something!!

Anyway, today for breakfast I had a bowl of instant oatmeal (plain)

Dinner--don't really know as I didn't take anything out of the freezer, so it will be a surprise, thought about having breakfast for dinner. My family thinks it strange to do so, but I know when I was growing up my Mom would fix eggs, pancakes, etc (sometimes we even just have plain cold cereral).

I like having breakfast for dinner. In fact, I like it better than breakfast for breakfast. My daughter never would tolerate it though, so now she's off at college we can eat weird stuff at weird hours and eat all kinds of unbalanced meals which would horrify her. I like my cold cereal for lunch. She thought that was awful too.

Breakfast: Toasted baguette with butter and a teensy bit of home-made marmalade. I never touch orange juice or citrus, but I seem to be okay with this. I use at most a half tsp on a large piece of bread.

Lunch: Yellow watermelon (it was a really good one!) and carrot/zucchini bread.

Snack: grapes

Dinner: NOLA style beans 'n' rice, corn pudding, avocado and red onion salad with just salt and a drizzle of olive oil. My husband had a beautiful tomato added to his salad. That looked good. Too bad for me.

The corn pudding is a new (to me) recipe and it's actually pretty low fat. It uses a very little butter, 1 egg, low fat milk, and lots of fresh corn. IC friendly and comforting! My husband said it was like babyfood, but in a very good way.

Grapes? Would love some--however that is one of the foods that i can't eat without problems. I can handle a few but I don't know how to stop at a few so I don't have any. Right now there is a whole bowlful in my refrig. and everytime I open it my eyes goes right to it. Hopefully they will be gone by tomorrow as they really don't last in my house.

Sweet potato fries baked in the oven with a drizzle of olive oil and sea salt.

It's been brought up before but definitely see if you can find a bakery in your area that doesn't use preservatives in their bread. Also, make sure the specific type of bread you're buying does not have vinegar in it.

Lunch: Stirfry with broccoli and mushrooms over brown rice

Snacks: Vegetable tempura (sweet potatoes, broccoli, mushrooms, and carrots)

and thumb print shortbread cookies with blueberry preserves, drizzled with peanut butter. Nice take on the idea of peanut butter and jelly. (I ate them seperately from the tempura obviously!)

Being Sunday, I fixed eggs and waffles (many years ago when the kids were small I received as a Christmas gift a heart shaped waffle iron-haven't used it for years, sort of surprise that it still works!).

Dinner-probably a baked potato (or maybe nothing, with all the food that I am cooking, I'm not hungry; no I'm not sampling any of it)

First post here. Finally able to eat some normal meals!
Breakfast: natural cured(nitrate free) bacon, scrambled eggs, homemade oat wheat toast with homemade pear jam and teecino with steamed milk.

Snack:teecino
Dinner will be: Beef stew with my nomato sauce, rhutabagas, carrots, mushrooms, green beans,peas and potatoes. Oat wheat bread, tossed mixed baby leaf salad with pear vinagrette(no vineagar of course).
Dessert: Homemade rhubarb pie with vanilla ice cream.(I have to say the pie was yum, that perfect tart sweet..had it last night already!)

Here's the recipe for pancakes. They aren't the most amazing pancakes ever but they taste like the instant pancakes you eat when you buy one of those all-in-one boxes where you just add water. It's def a cheap and easy recipe. haha

-1 cup flour
-1 tablespoon sugar
-1 tablespoon baking powder
-1/2 teaspoon salt
-1/2 teaspoon oil (i usually use canola)
-milk

Combine flour, baking powder, sugar and salt in a bowl. Add oil and stir until combined. As for the milk, I just add until I like the consistency of the batter. It depends on how thick or thin you like your batter, really. Just be careful not to overmix because your pancakes will be tough!
If you want to make blueberry pancakes, all you have to do is pour your batter into the skillet like you normally would when making pancakes. Then take a few blueberries and drop them on top of the pancakes as soon as you get them into the pan. Then when one side is brown, flip your pancakes as normal. The blueberries cook just enough and kinda work their way into the batter.

(I don't like olives so I didnt use them. I just used some dried italian herbs and lots of butter on mine. Green olives are in the Try It section so you may or may not be able to tolerate them. The bread is really good without them anyway.

Last night worked out: In a big one of these:

Pan grilled chicken breast (little smart balance, little olive oil) for the last five minutes turn it down and add asparagus and garlic (I don't like burnt garlic). Steaming in the chicken broth gives the asparagus good flavor.

Took some baking potatoes and cut them in chunks with skin for a quick boil and voila served it all up. There was enough liquid in the bottom of the pan to drown the taters!

Blueberry juice and Vanilla ice cream with caramel sauce.

This morning eggs with a nice fresh artisan multi grain bread, a pear and some milk.

Late lunch the bread with some peanut butter and a few bites of cold chicken from last night.

NOMATO! Cool.....I'm all over that! Gotta get some and do the whole wheat organic pasta thing. Little basil, some mozarella....yum.

Tomatoes, eggplant and potatoes are all related in that they are members of the nightshade family. If you have problems with potatoes I wouldn't suggest trying eggplant right away, but neither potatoes nor eggplant seem particularly acidic like tomatoes. I never had any problems with either potatoes or eggplant. Unfortunately my favorite way of eating eggplant is Eggplant Parmesan, which needs a generous amount of tomato sauce, so I don't go there.

Last night: Sashimi quality tuna steak, seared all sides in hot butter, red in the middle. Oragnic multi grain with butter. Honeydew. (The honeydews at the local Fresh Market are PERECT!)

Breakfast this morning: Kashi cereal with milk, pear. Camomille/mint/honey brew. (CMH)

Lunch: Left over pan broiled chicken breast, asparagus and taters in garlic jus. Organic vanilla ice cream with HOT butterscotch topping. Milk. CMH.

Thinking about dinner.


my favorite way of eating eggplant is Eggplant Parmesan, which needs a generous amount of tomato sauce, so I don't go there.

I have Nomato on order, can't wait 'till it gets here....have you tried it?

I eat eggplant with no problems.

I also made eggplant parm the other day and served it with nomato sauce with mushrooms. It was good and gave me no problems. The sauce isn't exactly a substitute for tomato sauce but it does taste good. Eggplant's actually in the bladder friendly category. Like Goldfinch said, if you have a problem with the nightshade vegetables it might be a problem, though.

Last night, I was looking for a cookie recipe that used oil instead of butter 'cause I didn't have too much butter left in the refrigerator.
I used that recipe and just substituted white chocolate chips for the regular. They weren't semi sweet like the recipe suggested but I like a sweet cookie so the end result didn't matter. The taste is surprisingly good for not being made with butter. I also didn't have any almond extract so I just doubled the vanilla. It's a really easy cookie recipe.

Yeah, I've seen your recipe before. I'm gonna try it sometime. Its just hard because I am a full time student so I usually try not to attempt too many questionable ingredients (lemon oil) while I'm going to school. I try to avoid any increase in symptoms. I'll probably try it during Thanksgiving break, or something though!

L: left over take-out Vietnamese chicken & veg coconut milk curry from the previous night's dinner on rice from same. Very good, mild, not spicy. Coconut milk seems to mitigate whatever is in curry that I can't normally tolerate. I can't eat Indian curries, which are often full of chili and very spicy, and often contain tomatoes, but I do okay with Thai or Viet curries that are milder and have no tomatoes, like green curry.

D: Also didn't get around to dinner until after 9, and had no interest in cooking what I had planned, so my husband had some scrambled eggs with chives and finished off some other misc leftovers, and I had a very satisfying piece of his homemade multigrain toast topped with Adams crunchy peanut butter and a glass of organic milk. Just like coming home from middle school.

Breakfast: Blueberry Banana Muffin that I made,banana,Glass of milk(Bananas are on the try it list)

Lunch:Grilled Cheese Sandwich(with Mozzerella cheese),Mixed green salad with Vegenaise as dressing(Vegenaise has been fine for me I buy the organic Gold label it is found in the fridge section of your local health food store. I use it for everything. I even cut up Bubbie's dill pickle into it and use it as a tatar sauce for my fish.)

Supper:Yam,steamed green beans/caulifower/broccoli,Fish with Breadcrumb batter(breadcrumbs,I also use Simply organic dip mixes,I will add a little of the dry powder either creamy dill,ranch or whatever other one they have than have no problem ingredients. Again found at your local health food store. I mix it with the breadcrumbs and then dip fish in milk then breadcrumbs. I guess you could use eggwhites if you can't have milk.


I love to eat and I have always loved strong tasting foods like Thai food and especially loved my vinegar. It was an adjustment in the beginning but now my taste buds have changed and I'm enjoying all new foods. I tend to eat all organic and free range which is also new to me. The one thing this bladder condition has given me is better health. I was the worst junk food addict and now I love my veggies.

Carole, my diet has changed a great deal in the past few months. For the first year of symptoms and struggling with diagnosis, then waiting for Elmiron to kick in, I ate a VERY strict IC diet. In the past few months I find I am able to broaden my diet quite a bit, although I still stay away from all tomato products, things that are obviously pickled or heavy on vinegar, all citrus fruits, coffee, black and green tea, soda and red wine. I stay away from Chinese food because of the heavy use of soy sauce, but Viet and Thai food seems to rely much less on soy sauce.

I had a very mild Thai green curry for the first time last month, and did okay with it, so now I am going to experiment by making my own, with just a little green curry paste and coconut milk. Thai soups seem very acidic and often contain tomatoes, so I stay away from them. I don't advocate it for others, because until you really get your symptoms under control it doesn't seem worth the risk. However, I've never been especially sensitive to herbs and spices, so for me a mild curry may be less of a risk than it might be for others.

Lunch: Shells with a spinach, mushroom, and tofu filling, (Tofu gives a lot of people problems so be careful with it. I am not entirely sure why it doesn't seem to bother me. I'm just glad it doesn't.) topped with some nomato sauce and parm cheese.

Snack: Amazing powdered sugar donut with whipped cream in the middle.

Dinner: Sweet potato gnocchi tossed in a basil brown butter sauce, finished with a drizzle of olive oil

Dessert: sugar cookie

Breakfast: toasted corn bread

Lunch: soup leftover from dinner--pureed veg, included potato, fennel, zucchini and a little poblano chile (It was a mild poblano but I know not everyone can eat chili peppers of any kind.) And pie! Parsnip buttermilk pie. Yep, parsnip.

Dinner: macaroni and cheese, apple-celery-walnut salad.

The only good thing about me and the IC diet is the fact that even before IC, I've always had the enjoyment of making everything homemade-from scratch. I just think it's really fun. I froze some too.

B: Cereal

L: I made some kind of vegetable stew, I guess you'd call it. I browned up some fake chicken (It's vegetarian. I actually found a brand that looked safer than most. It was my first time trying it so hopefully it'll be okay.) and added it in at the end. It had black beans, carrots, nomato sauce, mushrooms, vegetable broth, garlic, a bay leaf, and oregano. My sister and I both thought it tasted a little bit like chili, without the heat, obviously. It was really good.

D: White pizza from California Pizza Kitchen (I havent had it before. I probably shouldn't try two food experiments in the same day but oh well. We'll see how it goes. Well, I hope)

Dessert: Homemade sweet potato pie. My sister and I made the crust and pureed our own sweet potatoes and everything. It was seriously so good! Naturally, we topped it with homemade vanilla whipped cream.

Snack: Homemade pear coffee cake. (This turned out really, really good!)

Lunch: Creamy black bean soup, served with tortilla chips and diced avocado.

Dinner: Pan-fried herb encrusted tofu (Many people have a problem with tofu. It is not typically safe for those with IC so be cautious with it.), garlic mashed potatoes, sauteed spinach with butter and garlic and finished with a drizzle of olive oil, gravey for the tofu and mashed potatoes.

B: Steel-cut oats with Shagbark hickory syrup. If you've never had that, it's a nice change from maple syrup--kind of smoky tasting. Peppermint tea (nuff said 'bout that.)

L: Leftovers from Viet dinner: tofu in lemongrass with vegetables over rice.

D: Okay! Baaaby, I want you to know I made sweet potato gnocchi with brown butter and sage. My first time ever making gnocchi! Not bad! Next time will be better. Getting it to not be too sticky but still taste like sweet potato is the trick. But brown butter and salt covers a multitude of sins. My second batch was browned a bit more in the butter, and that was an improvement.

To all of you who have never used lemongrass, it's kind of a revelation and seems to be well tolerated by ICers. You can make an exotic lemony Asian tasting chicken broth by adding a couple of stalks when you make stock. Nice if you miss all things tart and sour, like I do.

I really, really wanna try some lemongrass. I miss the taste of lemon so bad. I miss having some "brightness" to my food. I feel like all the flavors that are IC friendly all taste kind of "heavy", if that makes sense.

L: Mac 'n' cheese leftover from dinner and a really good crisp Arkansas Black apple. When they're good they're great. I think it's my favorite apple.

D: Home-made chicken soup with barley and vegetables. Barley is a great change from noodles or rice, and has far more fibre than either. And it's toothsome! I just love having a meal in a bowl. For dessert, of course another pb cookie. I made them yesterday for my daughter, who gets back from school tomorrow and needs some serious fattening up.

Baaaby11 this was a great idea. I have had fun reading and seeing what you all of you eat. Some of you are very creative. I can now eat whatever I would like since I had my bladder removed 16 years ago. However my daughter age 13 has now got IC symptoms and I have started her on the diet. She is so IC diet sensitive.

I just wanted to share one thing I have learned from one of my IC friends. If you add beta carotene to tomato sauce it reduces the acid. I can still fix spaghetti, pizza sauce, lasagne etc. by just adding in a bottle of pureed baby carrots or sweet potatoes. No one in the family notices the difference, and my daughter has done very well with it.

I was so scared to try this out on my daughter just thinking that it might cause her a flare. It has not seemed to bother her in the least amount. My IC friend swears by this.

Please always use cation when trying new things. Maybe just a little the first time until you know it is ok for you.

Sounds fantastic. What did you use besides the dill? Butter oil anything? My daughter loves salmon, I have avoided it because of the lemon. Please let me know I would really like to try this.

First I soak the salmon in milk for 12 to 24 hours. It removes some of the fishiness. Then I drain the milk, but don't rinse the salmon. I Pam the baking dish and sprinkle down a tiny bit of salt and dill. Then put the salmon down, another bit of salt and more dill, and a small pad of butter on top.

We are going to be eating a lot of yams this week. I bought ten yams for Thanksgiving dinner at my in-laws and managed to completely forget to bring them. I did cook a spectacular turkey with stuffing, though, IIDSSM. So, although there wasn't a lot of meat left on it by Saturday, of course the carcass was all mine! There's nothing quite like turkey soup on this whole planet.

I went out to breakfast this morning with my husband because we had to take our son to work - (he had to go in at 6:00a.m.). We went to IHOP and I had Pumpkin Pancakes (yummy), eggs (over-easy) hashbrowns. It also came with bacon or sausage which I really don't eat so I gave that to my hubby.
For lunch, I didn't eat as I was still recovering from breakfast.

dinner:?? who knows as I will be out shopping. Probably a hamburger.

Plus my sister made amazing (well, it looked amazing) chocolate mousse this morning and of course, I couldn't have any. I am justified, right? :smile tee At least I had a safe food instead of a bad one!

Lunch: Mock chicken and dumplings (which is just made with fake vegetarian chicken broth, vegetables, herbs, and dumplings)

Dinner: even though I just had them not too long ago, I was watching Throwdown with Bobby Flay and it was the dumpling episode. Def gonna make some pan fried dumplings tonight!

lunch: tofu in a beet, butter, cilantro sauce over rice served with some zuchinni sauteed with butter and garlic

snack: my sister and I made homemade soft pretzels. Oh my god. So good! They tasted just like the ones you'd buy at Auntie Anne's or somewhere like that. The first one I ate just had butter and pretzel salt and the second one was dipped in sugar and cinnamon.

Dinner: since I sorta ruined my appetite with the pretzels so I just had some garlic mashed potatoes.

For breakfast I am having a bowl of instant oatmeal and a piece of toast. I'm also having a White Chocolate Mocha from Starbucks.
Lunch: I have some microwave fries that I will cook for lunch and maybe something from down in the cafe (don't know what they have down there as this is the one week that it seems like its left overs due to the office being a ghost town!
Dinner: All I know is that we are going to a movie tonight (My husband and nephew is seeing Chipmunks and I am going to see "its complicated") this is what we call movie night-they go to one movie and I to another....don't know if that beats staying at home and watching TV till I go to bed (usually around 10:00 or so).

Yesterday:

B: My husband's been baking a lot of bread! So my morning toast is on the up 'n' up! I splurged and opted out of peppermint tea: I had about two T coffee in 8 oz foamed milk. Even that teeny amount of coffee tasted so good.

L: Tuna fish salad on crackers, an apple. Yes, I can have very modest amounts of mayo once in a while.

D: He baked two loaves of fabulous pumpernickel today! So we had a pureed soup of leeks, fennel and spinach, and I used the last of the frozen turkey broth to make it. We had potato-watercress cakes and slabs of warm buttered pumpernickel with the soup. Now that my daughter's home for winter break our meals have gotten a bit more elaborate. Kind of fun, for a while.

Tonight for New Year's Eve we are having several friends over, and I plan to drink a little white wine and eat some questionable food. I won't be surprised if I don't feel so great tomorrow. But after all, you're not supposed to feel good on New Year's day, right?

Hi all! This is my first post to the forum!

For breakfast I ate a packet of Quaker Oatmeal with a bottle of water

For lunch it was a few salteen crackers with a flat Sprite (I live off of Sprie but I have to let it go flat first

And for dinner, my hubby and I are going down to our neighbor's place for a new years dinner of Sloppy Joes. Don't know if I'll eat them... ust depends on how they're made

Yesterday:

Breakfast: toasted corn bread.

Lunch: apple and my favorite 9-grain bread w/butter from a bakery in Tomales. And, truth be told, some snacking from a bag of Trader Joe's Pita Puffs, which are addictive.

Dinner: for my husband's birthday we took dinner out to his parents at the beach. He requested a lasagne, so I broke down and made tomato sauce for it, figuring I would only use two thin layers of sauce and be able to scrape away most of it from my portion. It was vegetarian spinach and artichoke lasagne. I haven't had my own lasagne in two years, nor have I had any tomato products, so it was exciting and scary. It was delicious. There wasn't really a lot of tomato, but I couldn't really scrape it off either. So I swallowed some prelief (which doesn't do much for me anyway) and hoped for the best. Lo and behold, so far so good. I'm pretty convinced now that if Elmiron should be suddenly yanked from the market, I will suffer a major breakdown. I think this lasagne could actually be made without the tomato sauce and still be very good. We made apps and a cake too, and my BIL contributed a nice arugula salad, which I dressed with just olive oil and salt. At first I just gave up on salads, but now I am used to just olive oil and don't miss the vinegar like I used to. Of course there was a lot of red wine with dinner, but I've adapted to that loss as well. If I am able to eat a few bites of tomato now and again, I'll consider it a fair trade.

Both cinnamon and ginger are on the try it list so if your bladder is feeling well you can try them(one at a time). Check the IC diet food list on this site for safe,try it and caution foods.

I'm gaining weight...Breads and sweets are a weak spot of mine, but you may as well enjoy what you can while you can. I need to start walking outside to make up for it.

It was fabulous! I make my noodles thicker than most and it was just so comforting to bite into the soup.

Dessert: Earth Fare vanilla ice cream. :) Milk, sugar, vanilla, salt, and...one last ingredient which I've forgotten...It's on the safe list, of course.

I'm also making caramel at the moment, but it may have to wait until tomorrow.

Eating a lot less lately...Something is making my Crohn's act up horribly. I really hope it's not the IC medication.

Breakfast: Homemade IC friendly "chilaquiles" - scrambled eggs with pinto beans (Safeway Organics can), sliced strips of corn tortillas (Trader Joe's, no problem ingredients), red bell pepper, egg whites. A glass of milk.

Snack: 1 small bartlett pear

Lunch: Mini pita (Trader Joe's) with Philly light cream cheese, roast beef, spinach leaves; Baked Lays Potato Chips

Snack: 4oz 2% cottage cheese (individual servings Knudsen) & snack bag of baby carrots

Dinner: Italian baked chicken (2 drumsticks baked with batter made from flour, egg white & Ian's panko breadcrumbs with garlic, basil, oregano mixed in), 1/2 cup brown rice (Trader Joe's microwave bag), steamed zucchini

Snack: Cinnamon bread (Semifreddi's)

Simple today...not really able to eat much.

Breakfast-Snickerdoodle

Lunch/Dinner-Two kefir biscuits, peas (garlic, olive oil, basil, feta)

Dessert-Whipped cream (no sugar) with blueberries

I might make some panko chicken and okra tonight, though. It just depends. The biscuits would go really well with that...

(Yesterday)

Breakfast: steel cut oatmeal with maple syrup, tea that doesn't deserve mention it's so boring.

Lunch: Misc nibbles, yogurt, and first rhubarb of the season (no, I didn't grow it) stewed with sugar, still very tart. Ate it hot, loved it. Anyone who misses tart food should try it; I assumed rhubarb was a no-no, but it seems that some ICers tolerate it well. Worth a try. If you like it, warm rhubarb goes fantastic with vanilla ice cream or whipped cream or even yogurt. And it satisfies that craving for tart.

Dinner: Black Cod burritos, made with Trader Joe's "home-made" flour tortillas, rice, slaw with Mexican crema.

The slaw is just plain finely cut cabbage, salted, and mixed with a combo of full fat fat yogurt and a touch of 1/2 and 1/2 to thin it a bit. Sour cream would work, or creme fraiche, thinned. If you salt the grated cabbage and let it sit for a couple of hours, it softens up a bit and gains some flavor. Eating slaw without citrus or vinegar or mayo is pretty dull on its own, but inside a fish burrito with lots of other texture and flavor it works pretty well.

Today.

B: Buttered multigrain toast (bread made by my husband!)

L: Greek Lentil and Vegetable Spread, still warm, on crackers and an apple.

Snack: Unfortunately I am addicted to Trader Joe's Pita Puffs. Yikes. I hope I get over this soon.

Dinner: We made a Pizza Bianca tonight, with fresh buffalo mozz, radicchio, artichoke and caramelized onion. I still miss tomato sauce on pizza, but it wasn't bad, all things considered. The veggies were yummy and the crust--thank you my talented DH--was thin and crunchy. Don't ask that man to make you a cup of tea, but if it needs to be kneaded, he has the touch.

Breakfast: Erewhon Raisin Bran with nonfat milk, hot nonfat milk with Pero Extra (Coffee substitute, dark roast) & a drop of vanilla & tsp of sugar

Lunch: Trader Joe's Microwave brown rice, 365 canned pinto beans, Trader Joe's reduced fat mozzarella cheese. 12 blackberries with a packet of sugar. Arrowhead bottled water with 2T of Hint blackberry essence water (Hint water bought from the ICN shop)

Snack: Pear bar (bought from the ICN shop)

Dinner: Garlic basil pasta with olive oil, cauliflower, broccoli, feta & parmesan cheese.

Snack: Three hundred calorie packs of Lorna Doone cookies with a 1/2 cup of nonfat milk

Breakfast: hashbrowns and pancakes

Lunch: Chickpea patties with gravy and a side of basil and garlic green beans

Snacks: a little bit of fennel and apple pasta (sounds weird but fennel and apple is so good together. I found some real 100% apple juice and used it in some pasta, paired with fennel, and it's really good. I only use a little juice and it almost adds some acidity and didn't flare me at all.)

And I also made some peanut butter and white chocolate chunk cookies.


I'm on spring break so tons of cooking and eating will be done. :lmao:

Just returned from visiting my daughter who is also on spring break. She will graduate in May, and has so much work to do she couldn't come home--so I went up to WA. But now I'm back and in my functioning kitchen, not one where five college students have food in all different places, and in all stages of going bad and an unbalanced variety of pots and pans and utensils. Like 4 identical skillets, no big pot for spaghetti, 4 tiny wooden spoons but no spatula, no serving spoons and no bread knife. But for some reason there are six open bottles of wine in the fridge, several large cans of coconut milk in the pantry, and several containers of hummus, also all open. We ate most meals out, as you can imagine. What are mothers for, after all?

B:Toast, what else?

L: Yogurt with plum butter (made from my SIL's plum tree) and a very good pear and something else but I can't remember what...

D: Wild Alaskan salmon, rice, and fresh English peas with just a little butter and salt. Gotta love fresh peas!

I'm a college student, a ridiculously busy one at that, but I couldn't STAND not being able to have a functioning kitchen! I live off campus, in an apartment that I share with my twin sister and we cook ALL THE TIME. We both love cooking and always try to make time for it, no matter how busy we are!

I know how busy your daughter must be! I have so much work to do over spring break, too! Kinda disappointing, being that it's supposed to be a "break" from school. :rolleyes:

I don't want to go way out on a limb here, but you and your sister may be more highly evolved than the average college student! And you clearly enjoy cooking. The cooking gene skips a generation in my family. I got it. My mother and my daughter haven't learned a thing from me! They consider me an annoying fuss-budget when it comes to food, but surprise, surprise, they love it when I feed them!

I'm feeling not at all like cooking today, so here's how it's going...
Breakfast: 2 blueberry biscuits, hot water with honey
Lunch: Safeway Organics pinto beans, Trader Joe's lowfat shredded mozzarella cheese, Trader Joe's Organic brown rice. FruitStix Organic Coconut Bar (kind of like a coconut popsicle, bought it at Whole Foods).
Snack: Looza Pear Nectar (Whole Foods ordered me a case) blended with ice to make a slushy.
Dinner will be Trader Joes Just Pasta mixed with steamed vegetables, feta cheese, parmesan, and a sprinkle of dried garlic & basil. If I didn't have a sore throat, I'd also have a salad with Marie's Lite creamy ranch (use the fork trick- put dressing on the side & dip my fork in it before each bite of salad, lots of flavor, less quantity) & Safeway Organics canned garbanzo & kidney beans.

I'm in a flare so prepare for bland.

Breakfast: Toast with butter. (boring but works)

Lunch: Turkey sandwich with a little cheese.

Dinner: I didn't eat dinner because I felt pretty bad at dinner time so I ended up making this ensemble:
Toast with butter
Waffles with maple syrup
and for the finale
Regular oatmeal spiced up with a little peanut butter and a little brown sugar

Not bad all-in-all. I just feel like whenever I eat I'm probably eating something I shouldn't.

Yesterday I had:

Breakfast: pancakes

Lunch: quinoa with peas

Dinner: Pizza with spinach pesto, topped with lots of mushrooms

And the other day... I had some blackberries and they didn't seem to bother me too much! :smile tee I've been doing the diet for around 8 months so I decided to finally try something that was a little more risky. I hadn't had any fruits except for watermelon, blueberries, and pears. I'm gonna try them again to make sure I really can tolerate them and I wasn't just having a "good" day. But yay! They tasted soooo good. :woohoo:

B: Toast, as usual

L: Tuna burger (fresh tuna, rare! Very tasty). We ate out and all I know is that there were some grilled red bell peppers and lettuce on the burger, and butter and maybe a very small amount of mayo, which doesn't bother me in moderation.

D: Cheese on crackers, roasted veggies.

Veggies: preheat the oven 400-425 degrees. Put in a baking pan: 2" pieces of carrot, whole baby potatoes, thickly sliced portobello mushrooms, sliced fennel and sliced onions. Drizzle with olive oil to coat lightly, dried or fresh herbs, salt and pepper. Toss in a few garlic cloves, peeled and halved. Roast about 45 minutes, turning the veggies every ten or fifteen minutes until onions are caramelized and potatoes are soft. I used fresh thyme, but if I didn't have that I would probably use dried rosemary. You could use any other root veggies, whatever you like.

Breakfast: Oatmeal (instant) and toast.
Lunch: I went out to Mexican food (there are only a couple of restuarants that I can go to without a problem; this one however was not one of them! It is a new one and everyone wanted to try it, so I had what I usually order-however, it was too spicy for me. I think I ate maybe 1/4 of it and asked for a to go box. It is in the refrig here at the office, but probably will be in the trash can before long.
Dinner: Pork chops, mash potatos and veg. (at least that is what is in store for tonight.)

Dessert: Ice cream (vanilla); of course, I might just skip dinner (depending on who is home) and eat just the ice cream.

It was homemade granola with banana for me. Lunch was a simple green salad with mushrooms here at home. Tonight we go to a church dinner so I don't know what is in store. I hope it is IC friendly.

B: same old, same old

L: An apple, but the rest is a blur. Probably not noteworthy in any way.

D: Made dinner for friends, or should I say guinea pigs? A chicken dish and a cake I have never made before. Pipian Verde de Pollo is chicken in green pumpkin seed sauce (mole verde) from the state of Puebla MX. I used a mild fresh green poblano chile pepper, which is not a problem for me, and all the rest of the ingredients were very IC friendly: the sauce is made from toasted pumpkin seeds (pepitas), lettuce, radish leaves, cilantro and chicken broth. That's it. The chicken is simply poached with aromatics, then skinned, and then warmed in the sauce. I served it with plain white rice, extra sauce, roasted asparagus, and a very basic no-mayo slaw. I saved out a portion with no vinegar for myself.

For dessert I made cake, ice cream and rhubarb. The cake was great, and totally easy--I'm not much of a baker. It calls for a cup of white flour to half a cup of cornmeal--really a southern version of an Italian polenta cake--and it is different and delicious and would be good with any fruit topping you can tolerate (pears or blueberries would work perfectly). I made a rhubarb compote and served it warm with the cake, and my husband made buttermilk ice cream. Any vanilla would be fine. I'm going to be sad when rhubarb season is over. PS VickiB: just pop me an email when it's harvest time!

Lucky us: we have leftovers!
