I've been following the IC diet pretty strictly for three months. I have sensitive tastebuds and have been enjoying my own cooking, but it has been a problem for my husband, and sometimes my father-in-law and his caregiver, because the guys' palates are not at all sensitive. I used to use strong spices to keep them happy. My husband and I take turns cooking, and I usually fix something he can add to his portions to make dinner more flavorful for him, but he was still unhappy with what he calls "bland." Last night, I finally prepared an entire meal that the family really liked.
I fixed broiled pork chops rubbed with olive oil, pressed garlic, and blue poppy seeds, with a garlicky cucumber salsa in pear juice and herbs, a cold bean salad with cream-cheese-fake-mayo and fresh herbs, and rice.
Grandad skipped the salsa, but my husband and Grandad's live-in added a little green hot sauce to it and loved it! Nobody noticed the lack of real mayo in the salad, tho my husband said it was a little sweet (lack of vinegar).
I usually cook by the Iron Chef method, starting with main ingredients then adding a pinch of this and a dash of that. I had just gotten a shipment of new IC-friendly herbs from my favorite on-line vendor so I had a lot to work with for tartness and pepper substitutes.
Now I'm trying to remember just what I threw into those dishes!
P.S. My IBS was unhappy with all the raw garlic in the salsa, but the flavor was worth the tummy-rumbles.
