View Full Version : 5 ingredient Maple Roasted Chicken (1-2 ingredients from 'may be ok' list)

This is one of my favorite recipes ever even before the IC started. It does contain ingredients that are on the 'May be ok' instead of 'Usually ok' list though. I've put these in bold italics with stars. It's super fast and easy to make and tastes fantastic!

The recipe says this makes 4 servings but my fiance and me usually finish all but a small portion of veggies off in one sitting (and we're tiny). I made this when his mom was visiting and used 6 thighs and a bit extra everything else and there were no leftovers so if you have a lot of people to feed might want to double up and use a slightly deeper/bigger pan :)

Ingredients


4 large chicken thighs (calls for skinless 1.5lb bone in but I always use de-boned and sometimes with skin)
2 small sweet potatoes (bout 1lb total), peeled and cut into 1 inch chunks
*1 small onion cut into about 1" wide strips/pieces* (I use a white one)
1/2 of a 16oz bag of baby carrots (you can substitute 8oz of parsnips cut into chunks but I don't see parsnips anywhere on the IC diet list. I love carrots so I just use those)
1/4 cup maple syrup (real deal 100% maple syrup)
1tsp of salt and *1/2 tsp of pepper*


preheat over to 450F
in a 15x10 jelly roll pan or shallow roasting pan, combine chicken, sweet potatoes, onions, carrots, maple syrup, salt and pepper. Toss or mix with hands to coat everything evenly.
roast 40-45 minutes or until chicken juices run clear and liquid in pan thickens slightly. Stir mixture and turn chicken over once halfway through roasting.

Sounds incredible! Thanks for sharing. I can tolerate all the things in the recipe. I like dark meat more than white meat so I am always looking for recipes that lend themselves to dark meat/thighs. Sounds VERY yummy!!:) And this recipe does seem one where using dark meat would be better than white.
I will just add that for most with food sensitivities, probably best to use real maple syrup rather than something like log cabin or aunt jemima.
I can tolerate parsnips, so I will probably use those to have a little color combo going on w/ the sweet potatos ;), tho roasted carrots are always great, too!

yes! real maple syrup is best, not the other name brand stuff! I edited the original post to reflect that! (thank you Briza)

I recently splurged and picked up a bottle of Bliss maple syrup. They have Tahitian Vanilla bean infused and Bourbon barrel aged. I got the Bourbon. It's 100% maple syrup, no actual Bourbon in it... it was just stored for a few weeks in old bourbon barrels so it picks up a bit of the flavor. Last time I had it was just about a week before my hydro-dist and it didn't bother me any so i'm hoping that remains to be the case.... it would be FANTASTIC in this recipe!

I substitute leek for onion, but the recipe sounds wonderful! I plan to give it a try.
