Hey Angela,
I would use a package of frozen spinach (thaw and squeeze out the water), mix it with some cream cheese (not the whipped kind) and some garlic, dill & a dash of salt. I don't know about the water chestnuts tho', I would have to check the IC diet cheat sheet.
It does seem like I have had some spinach dip in the past that had paprika or some other hot spice, but I would just leave that out.
I also have made the hot artichoke & spinach dip that is so yummy at some restaurants. I don't have any problems with spinach, artichokes, garlic, olive oil, mozzarella and Parmesan cheeses, and I think that is all that's in there, primarily anyway...that's what I used and it was quite tasty!
I am learning to make creative substitutions, e.g. using cream cheese instead of mayo, and so far everything I have made has turned out really well!

Make sure that the cream cheese you get is in the "block" form & not the tub. The tubs of cream cheese have sorbic or ascorbic acid in them...

Looks like a great dip......I wish I could tolerate it.....
but you are so lucky you can tolerate most of the items in the dip....I could never take the parmesan cheese, mayo, sour cream, and soup mix.....all of these items would totally flare me.....
.....ALTHOUGH...I must admit I should try the paremesan cheese.....as I may be able to tolerate this....I am just too scared to try it....but the others...I would not dare....

OMG, I made the best spinach-artichoke dip last month.
Everyone loved it AND it was low-fat!!
I combined several different recipies - and you can adjust the quantities of ingredients to make it just how you like it or what is "safe" for you. I added more spinach and parmasan cheese than what it says below.
6 ounces of Lite Veggie Cream Cheese
A can of diced Artichokes
A little can of diced water chestnuts
1/3 packet of dehydrated veggie soup mix (you can find it next to the french onion soup mix in the soup aisle)
1 cup of Frozen Spinach (thawed and drained)
1/2 cup Low Fat Mayonaise
1/2 cup Low Fat Sour Cream
1/3 cup Parmasan Cheese
Mix everything together - and serve hot!
(by putting it in the oven or mircowave)
I found that putting the cream cheese in the microwave for a few seconds makes it very stirable.
Also, when you microwave the spinach to thaw it out - put the soup mix in there too - it makes the veggie pieces nice and soft.
I dipped french bread in it --- soooo good!
