Roasted Potato Mix --From www.sparkpeople.com
(A free diet website: great tools for weight loss & no fees!)
Ingredients
3-1/2 cup sweet potato, cubed (skin removed)
3-1/2 cup potato, raw, cubed (red are great keep skin on)
1/2 tsp salt
1/2 tsp garlic powder
1 tsp basil
1/2 tsp dried rosemary,
1/2 tsp black pepper (I'm leaving this out, pepper doesn't agree with my IC)
Nutritional Info
Fat: 0.2g
Carbohydrates: 15.8g
Calories:68.8
Protein: 1.4g
Preheat oven to 350*F.
Mix all ingredients together in a large bowl.
Make sure all potatoes are well coated in oil.
Spread potatoes on cookie sheet in one layer.
Cook until potatoes are cooked through (about 30 minutes).
For crispier potatoes broil for a minute or two until well browned.
14 servings of 1/2 cup.
