THis may not be okay for everyone but it worked for me. I had a big bowl and no ic symptoms. I will try to give you measurements but I am a kinda throw it all together - seems about right kind of cook!
White bean and chicken chili
adapted from bon appetit by me to be ic friendly
2 T olive oil
1 cup chopped celery
1 cup chopped onion
1 cup chopped red pepper (any color that is okay for you)
2 cloves garlic minced or more if you like garlic
1 t chili powder (more if you can tolerate it)
1 t cumin (more if you can tolerate it)
2 cups best quality chicken broth (I use organic, no yeast!)
2 15 ounce cans white beans (or whatever kind you like)
1 cup frozen corn
2 cooked chicken breasts chopped in 1 inche pieces
1/2 cup whole milk or half and half
saute onions on olive oil until slightly tender, add other veggies and saute 5 minutes more, add garlic and spices, saute 1 minute more. Add broth, boil and then reduce heat and simmer for 5 minutes. Add chicken, corn and beans and half and half. Simmer on low heat for about 5 more minutes. Salt and pepper to taste. **recipe called for pickeled jalapenos (ic ouch) but I put them on the side for my family who could dice them and through them in their bowls. I served this meal with corn bread and a salad with avocados. Yum and no flare! I hope this helps someone else who misses chili!!
