Pear Almond Cobbler

The perfect winter sweet treat! If you don't have pears on hand use fresh or frozen blueberries, peeled apples, canned peaches, or any other fruit you love. This recipe is a terrific way to safely incorporate insoluble fiber into your diet - and it's delicious! (no peaches for us though ususally)!!!

1/2 cup flour
1/4 - 1/2 cup granulated sugar
2 tablespoons Acacia Tummy Fiber
1/2 cup soy or rice milk
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1/2 teaspoon cinnamon
2 cups of peeled, diced pears

Preheat oven to 350F. Lightly spray an 8" x 8" baking pan with oil.

Combine all ingredients except pears in a bowl. Pour batter into baking pan and smooth evenly. Sprinkle pears on top. Bake for 35-40 minutes, until golden, and a toothpick inserted into a cakey part of the center comes out with moist crumbs.
