I know we have ALOT of New ICN members this year!! And I bet they are wondering just what to cook! Or what to eat with the up coming Holidays.. I thought this would give everyone a chance to share some of their favorite IC friendly recipes that they will be cooking for the Holidays..
I am going to bake a pumpkin pie..I use this recipe and have always done fine with it..
Only thing is I leave the cloves out because I do not like the taste of cloves..
Ingredients:
3/4 cup granulated sugar Or Splenda
1 teaspoon ground cinnamon
1/2 teaspoon salt (optional)
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
2 large eggs
1 can (15 oz.) LIBBY'S 100% Pure Pumpkin Or any pie filling as long as it is 100% Pure Pumpkin filling!
1 can (12 fl. oz.) Evaporated Milk
1 unbaked 9-inch deep-dish pie shell
Directions:
MIX sugar, cinnamon, salt, ginger and cloves in small bowl. Beat eggs in large bowl. Stir in pumpkin and sugar-spice mixture. Gradually stir in evaporated milk.
POUR into pie shell.
BAKE in preheated 425° F oven for 15 minutes. Reduce temperature to 350° F; bake for 40 to 50 minutes or until knife inserted near center comes out clean. Cool on wire rack for 2 hours. Serve immediately or refrigerate.

I'll be "cooking" a Costco pumpkin pie!!!! Our daughter insists that's what she wants me to bring. :)

I'll be doing the WHOLE thing-- cooking turkey;dressing mash potatos, yams. Desert-- pumpkin pie and an apple pie; some kind of jello that everyone raves about, cranberry sauce (and probably the blueberry mixture that Donna wrote out earlier, and course Tamales (homemade- nope, not from me---I have co-workers who makes a big party out of this with their families. There is some stuff that I can't eat, but thankfully I'm not as diet sensitive as a lot of folks are.
Gosh, this is making me hungry!
Of course since I cooked it all (will start Wed. night) the men in the family has to clean up my mess.- last year they learned to clean as I go as its easier/faster that way and they could all get back to the games!!

I replied to the other thread, but I will give a really good ricotta cheese cake family recipe with you. I never had a problem with it bladder wise.
9X13 cake pan (I spray it with the Pam with flour for baking)
11 eggs
3lbs of Ricotta cheese
1 1/2 cups of sugar
1/2 teaspoon vanilla extract
1 teaspoon lemon juice
Mix all ingredients for 2 minutes, pour into cake pan and sprinkle ground cinnamon on top.
Preheat oven to 350 and bake for one hour or until not really wiggly.
Turn oven off and leave oven door open a little and leave cake in for another 5 minutes. Take cake out and let cool completely before refrigerating or serve warm.
I get great reviews from this all the time and always asked to bring this everywhere. Like I said, I never had a problem with it, so try it if you like.

I posted our menu in a past thread but will post it again since you brought it up. It is all IC safe (for me, anyway). And since I can't eat cranberry sauce anymore (funny, I am the only one in my family who likes it but now the only one who can't eat it) so because of that I am going to make ICNDonna's blueberry sauce this year....very much looking forward to it since I haven't had cranberry sauce since I was dxd in 2004! Thank you, Donna, for that idea...seems like an ideal substitute!
Dad makes the turkey and dressing...
The dressing recipe is:
equal parts torn white/whole wheat bread and homemade cornbread
sauteed onions and celery
LOTS of sage, black pepper
Turkey stock made from the giblets, neck and such
Put in baking dish and cook at about 400 degrees til hot and browned/crispy on top
The rest of the menu is:
Frozen yeast rolls...WHAT a Godsend those are!!
Steamed peas (sugar snap, peas in pod, or frozen peas...whatever is available) along w/ steamed baby carrots
Plain ole (or dressed up) mashed potatos
Natural gravy....made w/ the turkey stock and cornstarch, but good to have some canned or boxed chicken stock on hand, just in case you need it
Spinach salad (I ask for a portion to be set aside w/out salad dressing for me)
We usually don't have sweet potatos b/c none of us care for the dressed up w/ brown sugar, marshmallow candied yam recipes, tho I might make some sweet potato oven baked low fat fries this year if any of the family is interested...
No more than 3 desserts...pumpkin pie, choc merangue pie, flan, and possibly angel food cake this year if I can make it come out right! lol
Our gatherings are usually fewer than 10 people so my sis and I have learned over the years it is best to make just the basics w/ enough for leftovers, rather than attempting a bunch of things

Yes, I too will be eating more than my share of tamales during the holiday season....that is tradition here in December as Xmas is coming up. Nope, I won't be making them myself either but know many of families who do and sell them...and I will be going to many Tamaladas (Tamale parties) as soon as December hits. Luckily I can eat homemade tamales whatever the filling, since the fillings are usually made from fresh ingredients...even the chiles and such. I just have to be careful not to top them with any canned, bottled salsa.
Enjoy your tamaladas...so good! :) I am also looking forward to turkey and dressing w/ Donna's blueberry sauce!

My husband & I found a Wegman's not too far from our house & we were able to get an organic, all natural turkey breast( we don't like dark meat). And we found organic chicken broth for the gravy. I'll be roasting the turkey w/ a butter & sage mixture under the skin, & basted w/ molasses. I make sage & cornbread stuffing, but really happy I found organic cornbread mix. Since I'm a new IC patient, I'm trying to stick to the strict diet. We'll have plain vegies & mashed potatoes. Happy Thanksgiving!

Apps: FIL's home cured olives. Yup, he picks em and cures em and they are fantastic.
Turkey: cooked by yours truly and husband using Nashville SIL's family recipe. Very good if you like turkey.
Dressing: chestnut stuffing using simple white/corn loaf baked by my husband with usual suspects for seasoning. Cooked both inside (for meat-eaters) and outside the bird (for the vegetarians.)
Sauce/gravy made by my husband using giblet stock and an arcane multistep French technique. The best!
Fresh cranberry-orange relish, me. Boo-hoo. SIL #2 would kill me if I didn't make it.
Strange cranberry jelly mold made from canned cranberries by FIL from Sunset magazine 1950s recipe.
Baked no-frills yams (no casserole, just stand-alone good.)
Mashed potatoes made by my nephew. Kinda like cement, but it's important for the younger generation to start participating, right?
Salad by SIL #2. Always sickly sweet citrus dressing. No loss if I can't eat it.
Vegetarian entree: Nashville SIL likes it hot and cheesy. Usually enchiladas. Sometimes she also makes Spinach Madeleine. You southerners need no explanation. When I make it I cut back on the cheese; it's a good side-dish for Turkey, though.
Red wine: the last of my deceased BIL's own garage vintage. He was in the wine biz and it's awfully good. Boo-hoo again, for many reasons. He will be missed.
Pies: 5: sweet potato, pumpkin, crimson (blueberry/cranberry), apple, pecan. SIL #3 has the magic touch; my daughter and I are the magicians's assistants Wed night.
I lived in New Mexico for many years. Home-made tamales make me weep they are so good. Although about half these relatives eat turkey, I seem to be the only person who values the carcass, so we get to take it home. Two of my favorite meals are Thanksgiving dividends: turkey soup and pot pie. Have a great holiday!

Last year I did the whole 9 yards! this year I am baking 2 sara lee pumpkin pies and going to my brothers lol.

We have several dinners to attend on Thanksgiving day. We go to my Mom's side of the family at noon. At that one, I have 6 aunts and uncles and over 30 cousins, 2nd cousins, and all of their spouses and children. So, that one is a HUGE potluck with 4 cafeteria sized tables filled with food! We have to rent a banquet hall for that one because there are so many of us. But, it is the only time of the year we are all together. My family has been meeting there for 62 years. It is also really nice because there is a playground and a baseball field next door so all of the kids always go there after the meal and play. I LOVE going to this one because there are so many selections that there are tons of foods I can eat too. I'm just taking frozen pumpkin pies to this one.
Mid-afternoon, we have to go to my Dad's family's dinner. This is another big family with 5 aunts and uncles, my Grandma, and all my cousins and their kids. I am just taking frozen pumpkin pies and dinner rolls to this one. (There are just too many dinners for me to do heavy cooking for all of them. Besides, as you can imagine, we aren't remotely hungry by the time we get to this one, so we usually just visit with them while they eat.)
We go to my mother-in-law's for dinner. I will be pumpkin pies, dressing, layered pea salad, deviled eggs, green bean cassarole and hashbrown cassarole to this one.
We also go to my Dad and Step-mother's house for dinner on Saturday. I take dressing there too and also bring no-bake cookies (my husband and Dad's favorites.)
I also make a turkey, dressing, giblet gravy, rolls, salad, mashed potatoes, green beans, deviled eggs, pumpkin and pecan pies, and a few other things for our house. It is nice to have left overs to eat on for several days. Plus, it just doesnt seem like Thanksgiving unless we have the smell of turkey in the house. Also, since it will be raining this weekend, my husband will be stripping tobbacco Friday and Saturday and I usually cook lunch for him and the people who work for us that help him. So, I will serve some of this on Saturday. I buy a HUGE turkey. So, since he and about 5 other guys will be working on building the church on Sunday, I will make turkey and dumplings or turkey salad out of the leftovers to serve them for lunch on Sunday.
On Monday, (after I go to the Pain Dr), I will come home, take a deep breath and thank God that it is all over and take a LONG nap! :D
Happy Thanksgiving to everyone! I hope everyone who travels for the holiday will make it there safely and that all of us have a great (and flare-free) Thanksgiving!

Its just going to be me & my hubby this year at Thanksgiving. I plan on making corn pudding, baked butternut squash, green beans, rice pilaf with giblets(dirty rice without the bacon)and turkey thighs made in the crock pot. Its a new recipe I'm going to try, the thighs are placed on top of fresh carrots, celery and onions(or leeks), seasoned with dried sage and sprinkled with chicken broth. Fresh thyme and chives are added at the end. And of course, pumpkin pie, homemade with Trader Joe's organic pumpkin. I can't tolerate spices in ready made pumpkin pies and one thing I will NOT do is give up pumpkin pie. I plan to pick up Golden Spoon frozen yogurt on my way home tonight in pumpkin pie and vanilla flavors. Donna's blueberry relish with the frozen berries in my freezer.

This is our menu! Everyone is bringing something.. We will be having about 20 or more people over! And the nicest thing is they all cook these things so I can eat them!!! I do stay away from the Pecan pie!! But it is just a tradition and everyone else loves it..

Well, our Thanksgiving is a bust. One of my kids is sick and our dog just had surgery this morning and needs to be watched so she doesn't get into her incision. I hadn't planned on us being home, so not sure what we're going to eat. Reading all these menus is making me hungry!

Ronda: Know this is pass late, but could you possibly give me your receipe? (like I said my SIL made it and never pass the receipe to us - my family won't eat it, but for Christmas we will be going to Houston to see family and I know that some of them would like it as well.
