I made nachos tonite. pretty simple with ic friendly ingdnts.
round yellow tortilla chips (snyders and publix brands only have corn, oil and salt)
hamburger meat
mont jack cheese
green onions (if can't tolerate, just use the tops like scallions)
black olives
cilantro
crumble and cook hamburger in frying pan with your spices that you can use.
meanwhile:
layer chips single layer on dinner plate
shred cheese
chop green onions up
slice olives up
get cilantro leaves
After meat is cooked spread around over chips on plate. Sprinkle cheese over meat and chips. Put in microwave just enough time to melt cheese. Sprinkle the rest of the toppings and enjoy.
Sorry no salsa, sour cream, jalapenos but still very tasty.

Sounds great! You know I have been makng a Salsa using fresh Sweet red bell peppers, green onion and cilantro and a little olive oil!! I just put this in my mini chopper and chop away.. It is pretty good on tacos and burritos! So I bet it would be good with this!!!

so i'm hearing that any bell peppers seem to agree with alot of ppl. I have tried the green and had no problems. They were cooked.
Could you please give me specific amounts for your salsa recipe it sounds pretty darn good.
We are total mexican food fanatics so this is hard for me.

Oh Geesh, I do not have a specific amount.. No one else eats it here so it is usually just one red bell pepper and one green onion.. And just a little cilantro and about 1/2 teaspoon of olive oil. Salt to taste if you want!
I have also have used sweet onion in this instead of green onions..I have found that sweet onions do not bother me.. But I live in the south and they are pretty easy to get a hold of year around.. Organic refried beans is what I use on my burritos you just have to watch cause some contain tomato base in them..
I LOVE mexican food! This has been very hard to give up.. SO I am finding ways NOT to give it up!
I also have found I do fine with Sour Cream.. But that is just me..

thanks i understand about the specific amounts, just like my nachos. I haven't had a problem with raw onions (yellow). We are in Florida so we do always have those sweet vidalia onions; are those the ones you are talking about?

Yes I buy the Vidalia ones and when they are out of season then others usually come available like Texas sweets and there is another one but do not know the name..But the sweet onions just taste so much better and have never bothered my IC..
With All this talk about mexican food I had to make tacos tonight!!..lol

LeeLee, what do you do for your taco spices? I use to make my tacos from a mix, but they totally send me into a flare. I really miss tacos, we use to have them every 2 weeks in our house.

I just use ground meat and McCormick Seasoning salt< it has NO MSG and McComick Garlic salt..< No MSG.. I know kind of bland but hey it is better than nothing!
I top my taco with Lettuce, green onions, and cheese and sour cream and Top with my homemade salsa.. Some people cannot do sour cream but I do ok with it..I also use Kraft american cheese melts.. It looks likes the shredded cheddar but it is american cheese..
I sometimes make a taco salad also using Organic refried black beans.. Just really watch refried beans cause they have tomato paste added in them..

Your welcome Kris, Just remb they do taste a little different then the ones we are use to.. BUT they are better than nothing.. The salsa is also different but it has a fresh taste to it.. I miss tomatoes so much but I know what they would do to me so I have been settling with the red bell peppers.. I also make a pasta sauce with them if you are interested..

Leelee is right, check the canned refried beans to see what the ingedients are. Some do have things that could trigger symptoms, but there are many to choose from so you should easily be able to find some without those extra ingredients. I usually make my refried beans from scratch, and I've never been crazy about ground beef, so whenever I make refried beans, whether from scratch or from can, I use those on my tacos and chalupas, just no meat. I add seasonings I know I can tolerate. And my homemade "refried" beans aren't really fried...just mashed. Luv beans!

Oh I love refried beans too! :) There is one brand I can tolerate pretty well and I do okay with tortillas and monterey jack, so that's a common meal for me :D
I miss guacamole and jalepenos though :(

Thanks for the pasta sauce offer, but I've mangaged to work one out a few months ago. I usually make it when the peppers are on sale and freeze it. The pasta sauce also makes a good pizza sauce, so when I'm feeling really creative I'll make pizza pockets and freeze them and then I'll have lunch for a few weeks.
