View Full Version : Frozen Pumpkin Pie Recipe

This was sent to me by glutenfree mommy website. So if you are looking for something gluten free and ic friendly for Thanksgiving, here is what I was planning on making!

Ingredients:
1 quart ice cream (good flavors to use: Praline, Butter Pecan, Cinnamon, Cheesecake, Vanilla, etc) slightly softened

1 16 oz can cooked pumpkin

1 1/2 cups sugar

2 1/2 tsp cinnamon

1/4 tsp nutmeg

1/8 tsp ginger

1/4 tsp salt

2 cups whipping cream

1/2 cup pecan halves for garnish

Directions:

Put an 8 in springform pan in the freezer for at least 30 minutes. Spoon the softened ice cream into the chilled pan, pressing the ice cream into the sides of a pan with a spoon or spreader. Place plastic wrap over the ice cream and press down to form a 1/2 inch shell. Freeze for about 2 hours.

In med. saucepan, combine pumpkin, sugar, cinnamon, nutmeg, ginger, and salt over med. high heat. Heat to boiling, stirring constantly. Chill in the refridgerator for 1 hour.

In a separate bowl, whip the whipping cream to soft peaks. Fold into pumpkin mixture. Remove the springform pan from the freezer and remove plastic wrap. Spread pumpkin mixture even over the ice cream crust. Cover with plastic wrap and freeze for 3 hours or overnight.

When ready to serve, sprinkle with pecans over the top.

This may be prepared up to 2 days in advance.

Have you tried this yet? I can use fat free vanilla ice cream and then it will be fat free. Shouldn't there be some kind of liner on the bottom of the spring pan? Or is is supposed to stay in the spring pan all the time? Just wondering if the side is taken off.

I actually haven't made this yet! I just received the recipe a couple days ago and thought it looked pretty IC friendly. I thought it would be nice to pass along. I am planning to make it for Thanksgiving dessert since my kids don't do pumpkin pie. I ususally make a pumpkin cake or pumpkin muffins that they will eat. They just don't like the pie! The picture that came with the recipe just showed a slice of it on a plate drizzled with pecans. I would think you would take the side off of the springform, sort of like a cheesecake. I'm sure any ice cream or frozen yogurt for that matter would work. I will probably line the bottom of my pan with parchment paper so hopefully it won't stick. Hope this helps!

Do you make your own Ice cream or is there a certain brand you use? I have read there is gluten in ice cream.

I don't make my own ice cream! You would just have to check the label on the ice cream to make sure it is gluten free. I hear lots of people on here like the Breyer's vanilla. Hope this helps.

OMG that sounds SO perfect! But, can someone explain what a springform pan is? And what does it mean to "make an 8 in the pan?"

Springform pans are most commonly used to make cheesecake. You can find one at Walmart or even a supermarket might have them.

8 in means an 8 inch diameter pan :)
