I have a bad cold & was feeling totally sorry for myself today so I made a giant pot of soup. It came out really really good and having such a nice meal did cheer me up! Here's the recipe...
Somewhat Italian Chicken Soup
Makes about 10c of soup. I portioned it out into 4 tupperwares.
2 large chicken breasts (bone-in, skin removed)
Water to cover them, plus 2 inches above them, in the crock pot.
Salt
Dried Basil
Dried Oregano
Garlic Powder
2 Mushrooms, white, sliced thin
1/2 Zucchini, diced
1/3 Red Bell Pepper, diced, same size as zucchini
1/2 c Broccoli (broken into little florets)
1/2 stalk of celery, sliced, same size as zucchini
Penne Pasta (about 2 cups dry)
Steps:
1. Put the chicken in the crockpot & cover it with enough water to cover it, plus 2 more inches of water. Shake desired amount of salt, basil, oregano, garlic into the water. Set the crockpot for 6 hours. (Second highest setting on my crockpot.)
2. 3 Hours Later... Take out the chicken breasts & remove the bones. Put the meat back into the slow cooker.
3. 1 Hour after that (4 hours after starting)... Take out the meat & shred or cut it into small pieces, & add the cut vegetables. The kitchen smells fantastic now:) Call yourself a genius!
4. 1 more hour (5 hours after starting)... On the stovetop, cook penne pasta in water til done. Drain it. Then add it to your crockpot.
(To make this easier, you could cook this pasta while chopping your vegetables & starting your broth, so all you have to do after setting up the pot is to add things...)
5. Get it out of the crockpot now or your vegetables & pasta will turn into mush. I serve some & portion the rest to tupperware & set it on a rack on the counter to cool.
6. Serve with crunchy bread with butter, maybe a salad.
Or heck, knock yourself out & make carrot cake! (There's a good recipe for one in "A Taste of The Good Life" IC cookbook.) I didn't have the carrot cake tonight, but would really like some.... (sniff...)
