View Full Version : Sloppy Joe recipe

I had pretty much given up on sloppy joe's because I'm vinegar sensitive and can't find any sort of canned sauce or mix that doesn't have vinegar in it. (Even the dry mix had dried vinegar!) Then my brother gave me this BBQ rub that is OK for my bladder. I decided to experiment and came up with a great sloppy joe recipe. My husband even likes them, and he's a picky eater.

That said, please note that this is friendly to my bladder, but I can handle tomato products and onion. The onion could be omitted from the recipe, though, if it bothers you. I'm not sure about a replacement for the tomato sauce.

Anyway, I hope that helps someone. I was incredibly excited to have sloppy joes again!


Ingredients:
1 lb. ground chuck
1 small onion, diced or chopped
1 15-oz. can tomato sauce
1 tablespoon barbeque rub/seasoning
1-1/2 tablespoon brown sugar

Directions:
1. Put tomato sauce, half of onion, barbeque rub/seasoning and brown sugar into a small pot and simmer on the stove. Stir occasionally.
2. Meanwhile, crumble and cook the ground chuck until browned.
3. Add the remaining onion to the ground chuck and cook for a minute or two.
4. Stir the sauce into the meat and onion mixture.
5. Reduce heat and simmer together for 10 minutes.
6. Serve on buns. (Can add shredded cheese for a topping or additional diced onion)

Makes 4 large sloppy joe’s or six to eight smaller ones

what is the BBQ rub that you use? I don't think I'll be able to tolerate sloppy joes because tomato products are most definitely out for me, but I'm curious as to what BBQ sauce it is you found.

Thanks for sharing your recipe. I can't eat canned/jarred tomato products but I can eat fresh or cooked from fresh tomatoes, so I make a diluted tomato sauce from scratch when needed. As for the bbq dry rub, I would think that probably would be individual to anyone's particular sensitivities, so any seasonings that one can tolerate could be used as a bbq dry rub.

I have always made my bbq sauce from scratch, and now w/ IC have had to omit some things but have found other things to add and it is just as tasty. However, it still does contain cooked from fresh tomatoes, and I know most can't tolerate tomatoes in any form :(

I have recently tried homegrown Heirloom (yellow) tomatoes. They *seem* to be ok for me, so far. I had a slice on a sandwich 2 days ago, and a slice on my burger last night. Do you think i'd be able to create a tomato sauce with yellow tomatoes?? if so, would you be willing to share the recipe you follow when making your tomato sauce? Thanks a bunch!!! ;)

Yes, I have grown yellow tomatoes once and they were Dlish! And they ripen weeks if not months before red tomatoes:)
Well, for me making tomato sauce just means I boil the tomatoes in water or organic chicken or veggie stock and reduce them and smash them with a tomato smasher if needed...add little salt to taste and fresh garlic or garlic powder...I can tolerate onion and garlic and fresh mushrooms so usually those I sautee in olive oil right at the beginning, then add the stock or water and quartered tomatoes. I like the tomato skin so I usually don't blanch them to remove the skin. Not a long cooking concentrated tomato sauce....it seems the more concentrated the more likely I am to react, even when cooking from fresh....I know ICN member Waterflow just had a bumper crop of yellow tomatoes that she was canning so you might look up her posts or send her a pm. Hope I made sense here, if not, let me know, and I will repost step by step directions for how I make the sauce:loco:Bri

I have to admit I was kinda disappointed when I read the recipe. I thought it was going to be an IC friendly sloppy joe recipe and I got really excited...but it is most definitely not one that most of us can eat! :confused: I sure can't eat tomatoes...I don't think many of us can.

I'm happy for you that you can eat them though! So many recipes for things like sloppy joes and meatballs contain tomatoes, so I haven't made them at all since I got IC, because I have no idea what to substitute for it.

Kadi posted her meatball recipe a while back...she's very food sensitive so look it up and see if you can tolerate it? I don't make meatballs, but I make meatloaf frequently, and even pre-IC I never used ketchup or tomato sauce/paste in it. And it turns out really good! IF you want my meatloaf recipe let me know and I will post it.

Yeah! Post it! Now I'm craving meatloaf...But the problem is that if I try to cook something the act of making it really makes the morning sickness worse and then I can not eat it! That is what happened with the Mac and cheese...I made a cheese sauce using organic mozzarella, butter, and milk. Buy the time the sauce was done the fumes were making me nauseous...But I ate it anyway and then threw up! Now I can't even think about mac and cheese without feeling ill. So what I need is a personal IC chef to come and cook me IC friendly meatballs and meatloaf...And sloppy joes without tomato!

Bear with me because I don't follow recipes often because I used to work as a cook in a kitchen and I just learned to throw stuff together, hopefully to mine and others' liking!


Lean ground sirloin beef, chicken, or turkey (I personally prefer the beef or you can do a combo of a couple of those...for me the chick or turk by itself is too heavy in my stomach)
Grated carrots
Grated or chopped zucchini and/or squash
Grated cabbage
And just about any grated or chopped veggie you like
Diced onions (IC optional...if you sautee first in olive oil maybe fewer probs?)
Minced garlic (IC optional...same as onions above)
2 egg whites ( or one whole egg, I just don't care for the yolks)
Season with salt, pepper, and any dried or fresh herbs YOU can tolerate( I like dried or fresh oregano, parsely, basil)
Sometimes I throw in some plain breadcrumbs or crushed saltine crackers, but usually I forget, doesn't matter lol)
Mix all together lightly by hand but don't mush it together, otherwise it will be just mush

How much of each of the above ingredients?? DOESN"T MATTER...just depends on how big the dish is that you are going to cook it in! Personally, my meatloaf tends to have just as much veggies in it as meat, sometimes more veggies than meat, and I like to cook it in a muffin pan so I get little meatloaf muffins...they cook faster that way.

Can't remember if I spray or oil the pan with just a little olive oil first, probably so to be safe, esp if you use a muffin pan.

Ok, after you've put the mixture in whatever dish you're going to cook in, sprinkle plenty of bread crumbs on top. Cook at 350 degrees til done and tops/breadcrumbs are nice and toasty brown. Promise, they will be yummy.

Now if you want meat loaf and GRAVY, that will have to be another post:)

I know that tomato products don't work for many ICers. I'm wondering, though, if you could make a dry sloppy joe using all the ingredients except the tomato sauce. I'm not sure how that would work.

As far as the BBQ seasoning goes, my brother got it for me. I just e-mailed him to get more information that I will share when I have it. The bottle says "Germantown Commissary Epicurean BBQ Seasoning." Now here's the other thing. I'm going to list the ingredients, but some of these may not be friendly to all bladders. Again, though, I'm wondering if you could play around with some of these ingredients that work for you and still have more flavor than just plain hamburger.

Ingredients: Sugar, chili powder, sale, paprika, onion powder, black pepper, garlic powder, red peppers, granulated onion, granulated garlic, starch, tumeric and silicon dioxide.

And also with that being said, the good thing is that a little bit of these ingredients go a long way. I know there are some things that I can tolerate in small amounts but not larger ones.

Anyway, I'm not sure if this is helpful. I will post where he gets the BBQ seasoning once I find out from him. I love it because it gives me BBQ flavor without anything vinegar in it. Vinegar is one of my main triggers (along with caffeine and citrus).

Yeah. It is a dry seasoning rub. The "traditional" way to use it is rubbing on grilled meat to get a BBQ flavor without using BBQ sauce.

Sounds delicious, but unfortunately by bladder does not tolerate tomatoes, chili powder or red pepper of any degree. =(
