I found a good salmon recipe. I make it without the parsley and go very easy on the lemon juice. It's great even without the seasoning!


Baked Salmon with Oregano





AT A GLANCE>

Servings:
4 people


INGREDIENTS

2 teaspoon olive oil
4 skinless salmon fillets (6 ounces each), each 1 " thick
1 tablespoon +1 1/2 teapoons lemon juice
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 tablespoon butter, cut into small pieces
1 teaspoon fresh parsley, chopped (optional)

PREPARATION

Preheat the oven to 375°F.



Use the oil to grease a shallow baking dish that is large enough to fit the fillets in a single layer. Arrange the fish in the dish and turn to coat with the oil. Sprinkle with the lemon juice, oregano, salt, and pepper. Dot with the butter and cover with foil.



Bake until the flesh is cooked through but still very juicy, 20 to 24 minutes. Serve topped with the pan juices and parsley (if using).

Good recipe, thanks for sharing! I cook salmon at least once a week. I have found that salmon is so oily that I can just spray on some olive oil nonstick stuff on the bottom of the salmon, or just spread olive oil lightly on the pan b/f baking, and then remove the skin from the fillet after cooking...seems to be easier, for me anyway:) to remove the skin after cooking. Usually I have an herb garden...basil, thyme, and oregano seem to be the easiest to grow...and I make a sort of pesto out of the three w/ a bit of olive oil, fresh garlic, and cracked pepper that I spread on the salmon b/f baking. I usually do some diagonal slices in the fillet before cooking so I can get the herbs down into the fillet. I like to buy larger portions of salmon and cut into individual 6 oz servings to freeze.....salmon seems to be a fish that handles being frozen well and defrosts quickly. Really simple and easy and fast to cook...and always impresses dinner guests!:)
I am ok with lemon/lime juice in moderation, as well as parsley and other herbs.
