The IC diet info is very vague and I started it today and am practically starving because I don't know what else to eat! I'm eating anything on the Usually ok list and nothing from the rest. Does anyone know where provalone, american, and port wine cheeses are on the list? Also things such as crackers, nilla waffers, pretzels, and waffles? That would help me soo much!!!

It is tough but you do have to do alot of trial and error. For me in the beginning, I could not have provolone cheese at all. I was ok with American cheese. I was able to eat anything vanilla, like, vanilla oreos, ice cream, nilla waffers, sugar cookies, you get my point! You really have to be careful with things at first, try alittle at a time and keep a journal and then go from there. You will be surprised that not all things will bother you and you should be able to keep adding things back in. Like I said, it is really trial and error at first. Good luck and be patient, it will get better and easier for you.

I started very simple, Like broiled chicken and rice. Broiled pork chops and plain veggies. I was ok with any vegtables. I fried hamburgar patties. I did not use any seasonings at first either except salt. And only drank water and milk. I did this back and forth for awhile. Then I slowly started adding things like cheeses and seasonings and just whatever I thought would be ok. But I logged all the new foods I was writing down and my symptoms after I ate them. I also tried small portions at a time. Atfter a few months I was feeling much better. And knew the diet would be a new part of my life with IC...
I have been able to add back A lot of things. But have to stay away from almost all the things on the bad list..

I would have to say a big NO to the provolone (any aged cheeses are usually a problem) try american or monterey jack, they are usually ok. Also some pretzels have soy four so make sure you read the label, same goes for the crackers, nilla wafer waffles (try organic or Kashi and make sure you use REAL maple syrup,not Aunt Jemima). I have been successfull in the Gluten free area because they don't have anything bad in them. Also, Paul Newmann makes a line of organic cookies etc... Good stuff.

Sara, You should be able to drink port wine IN MODERATION. Due to its low acid content, I can have a glass every once in a while... ALSO, dont be afraid to try a late-harvest Riesling or Gewurztraminer. Houge (vineyard in Oregon) makes an awesome late harvest Riesling at about 9 bucks a bottle. Enjoy!
