I make this soup often but with some variations:
Peel potatoes and cut in halves (or thirds) and boil. When potatoes become soft, drain the water and mash potatoes. While the potatoes are stil hot, put in a block of cream cheese and mash it in with the potatoes. Add a lot of milk (depending on thick or thin you want it). Add chicken or salmon (in pieces-I often bake the chicken or salmon). Add corn (if using chicken), carrots (I boil these seperately so they are soft), and green onions (usually sauteed first). Add salt according to taste.
This is a delicious soup that the whole family enjoys! Have bread or cornbread to accompany the soup. Happy cooking! :)
