I found this recipe and it is delicious!
Garlic-Herb Pork Roast
2 lbs boneless center-cut pork roast
4 cloves garlic, peeled and crushed
2 tsp coarse salt (I used 1 tsp regular salt)
1 tbsp minced fresh sage (I used 1 tsp ground sage)
2 tsp minced fresh rosemary leaves (I used 1 1/2 tsp rosemary leaves in a shaker)
3/4 tsp freshly ground black pepper
1 tbsp olive oil
Heat oven to 450 degrees. Pat pork dry with paper towels. Place in shallow roasting pan. In small bowl, stir together garlic, salt, sage, rosemary, pepper, and olive oil to make a paste. Rub garlic paste over all surfaces of pork loin, place in oven, roast for 15 minutes.
Turn oven temp down to 300 degrees. Roast for 15-20 minutes. When internal temp is 150 degrees. remove from oven, tent loosely with foil and let rest 10 minutes before slicing to serve.
** I did increase roasting time for both temperatures.
This roast was so flavorful and moist!
I served it with mashed sweet potatoes, steamed green beans, and corn on the cob. My family loved it!
