Hi Everyone,

I didn't see leeks listed on the IC diet lists -- do people eat these without problems (if they are cooked in soups, and stews, etc?)

How about asparagus?

Trying to get a new repertoire of dinners going. It is tough though. I subscribe to cooking light and used to get a lot of ideas from them, but I would bet that 98% of their recipes in this month's issues include ingredients I can no longer handle (lots of berries, tomatoes, vinegars, etc).

I am ok with all veggies, as long as they are fresh or cooked from fresh [without adding any offending ingredients, of course, like vineger, one of my main (but few, thankfully) diet triggers]. I don't do so well with jarred, canned, preserved veggies, so I always buy fresh, occasionally frozen.
Best wishes! I love Cooking Light, it's my fav cooking magazine, but you're right, many of the dishes contain one type of vinegar or another! I may be a rare one but I am able to handle citrus in moderation, so I have found I can substitute fresh lemon or lime juice for vinegar in many recipes. And even better, my Mexican lime tree finally produced fruit this year, and lots of it :woohoo:

Some ICers have a problem with asparagus, but I can eat it with no problem. And I frequently use leeks instead of onions and garlic, which can be a problem for me.

Just know that asparagus will make your pee smell awful, it has that side effect. I made it the other day in a stir fry and my husband complained that his pee smelled bad for two days.

I have heard that it can cause that bad smell effect. Luckily I've never experienced that because I eat an awful lot of asparagus :)

I have been able to tolerate leeks in soup. Not sure about asparagus. And I am pretty diet-sensitive, so hope you can do leeks, too...
