I recently made a few more things from my taste of a good life cookbook. I want to share to give some of you some ideas of the good things you can still have. Me and my daughter LOVE fried egg plant. My mom always makes it and gives it to us. Well theres a recipe in the cookbook for it, and it was by far the best egg plant I ever tasted. :) I was so proud of myself. Then I made the peanut butter bars. My son went crazy, he said mom, these are so good, not only that but these recipes are easy. I also made the blue berry muffins with fresh blueberries. Now in the past I made the cheesecake that I absolutely loved and so did my kids. All these things if I follow the recipe, do not hurt my bladder. So there are still many things we can enjoy!! Next on my list to try is the blueberry fool. But my daughter keeps making me make her eggplant. :smile tee I know the diet seems to bland but really there are many things we can still enjoy. Donna, if your reading this, I can't wait for you to make a cook book with all your yummy ideas. :smile tee You have also given me many alternative ideas that were great. :)

Lisa so glad you are enjoying a better variety of foods! Can you eat red bell peppers? If you can I have a great recipe that is with a sauce made with red bell peppers and eggplant!

You just convinced me to buy the cookbook - I am absolutely desperate for cooking ideas and everything you discuss sounds yummy and nutritious!

Lisa or anyone else..
What is needed:
Egg plant
3 red bell peppers
1/2 pack chopped mushrooms
1/3 sweet onion or green onion<optional
Shrimp or chicken<optional
Pasta> Any kind is fine
Boil red bell peppers for about 20 min and peel them.
Then I use use my mini chopper to puree' them. Set aside.
Salte' Mushrooms, onions, shrimp or chicken in olive oil. Then add red bell pepper sauce. And cook for about 15 min or until pepper sauce is done..
While sauce is cooking.. I have my eggplant sliced and battered and I start frying them in veg oil.. I batter them in egg/milk and bread crumbs. Cook them until light brown..
Also have Pasta cooking.
When pasta is done drain and plate.
Put pasta on the plate then put the eggplant on top of pasta then sauce on top of eggplant.. Parmesan cheese to top.. If you can tolerate it!

TGI Fridays has that eggplant dinner and they top it with lasagna noodles, but they use vinegar to season it and of course I can't have vinegar but they use mozzarella balls, sliced up red pepper, so what I did was fry the egg plant and make the lasagna noodles and cut up mozzarella and sliced red pepper and I used a little olive oil instead of vinegar and thats really good to. They also use the litle round tomatoes but I just don't use them. The mozzarella cheese and the red bell pepper give it a great flavor with a little olive oil and of course the breaded fried egg plant but I fried my eggplant in canola oil cause thats what the cook book said to use. I have not experimented much with red bell pepper, I have only ever used a little bit in fear that it could bother me, but I won't really know until I try it.
