AAAAAAH! I'm desperately trying to find something to bring to a 4th of July Pig Roast tomorrow that's IC-friendly! Does ANYONE have an idea of a picnic-type dish I can bring??? ANY suggestions are much appreciated!!!

One really quick thing I can think of is to get a watermelon, a cantaloupe, and a honeydew and cut them in small pieces in one bowl.
If you want to do a baked bean dish, Bush's has one that doesn't have tomato --- and that's always good, and goes with a pig roast. All you need to do is to put in a bean pot or baking dish and heat. I usually remove a little of the juice from the can. If you wish, you can add some pieces of cooked bacon to make it look a little more home made.

I also add a little brown sugar to the canned beans.
I just finished cutting up a honeydew to take to a cook-out tonight. I also cut up one yellow bell pepper, one orange bell pepper, and one red bell pepper to take along. We are all bringing our own meat.
Awww...4th of July cook-outs and fire works. What fun!!!!!

I wound up making a melon salad... thanks for the suggestion, Donna! I made balls of watermelon, honeydew, and cantaloupe, and threw in some blueberries and torn mint leaves. It looked so pretty, and was gone within a half hour!! I'm heading to another barbecue tomorrow, so I'm making my melon salad again! :)
I like the idea of the baked beans as well, and will definitely try that. I had no idea that Bush's made a tomato-free baked bean, and that's wonderful!
Also, another guest at the pig roast made a delicious pasta salad that I was able to enjoy: penne pasta with olive oil, basil, sauteed spinach, mushrooms and zucchini, and chunks of melted mozzerella cheese. It was sooooooooo yummy! It started off as a hot dish, but even cold it was delicious! I'm going to try and recreate the dish very soon! :D
