View Full Version : Grilled Chicken Stuffed with Mushrooms and more

2 Chicken Breasts
1 cup of Mushrooms (I use baby Portabella's)
1 / 2 of a Red Bell Pepper
2 cloves of Garlic
Mozzarella Cheese
Olive Oil or Butter
Salt

Chop up Mushrooms and Pepper to 1/4 inch pieces.
Heat up skillet and add Butter or Olive Oil
Add Garlic, Mushrooms, Red Pepper, Salt and cook about 8 minutes.
While Veggies are cooking rinse chicken and cut a deep pocket without cutting all the way through.
Once Veggies are cool, put veggie mix and cheese in pocket and close chicken. Use a toothpick to hold the chicken closed.

Throw Chicken on the grill and cook until done (about 12 minutes).

I made this tonight -- it was delicious! Very flavorful. And not as messy as I had feared. I used bamboo skewers to more or less sew up the pocket. And I had leftover mushrooms and red peppers that I mixed in with some basimati rice for a side dish.

So thanks for sharing this one!
