View Full Version : Tomato-less Chili?

I was wondering if there is an IC friendly chili recipe out there. I am a novice when it comes to cooking. Sadly, I can't do peppers, but I can do cooked onion. I know that tomato products are in chili, so could there be another way to make chili?
I haven't found it yet, but I would also love to hear it. I don't know if a low acid based tomato, using some prelief would be ok for you or not.
I imagine to do it though you would have to grow your own low acid tomatoes, stew them yourself and eat it them.
I don't know if you could adequately home can a low acid tomato. I know that you can water bath regular tomatoes but it is because of the high acid. I would think if it can be done the low acid would have to be pressure canned. This would be something you would have to check into if you could eat them.
I think that if you don't use tomatoes and you don't use chili powder or chili peppers, it's not really chili!
I have a recipe for a white chicken chili you could modify to your needs, but again, without the chili pepper, it's really just chicken and bean soup!
1 lb dried white kidney beans
2 medium boneless, skinless chicken breasts
1 tsp olive oil
1 garlic clove, minced
1/2 small onion, chopped
1 medium green pepper, chopped
2 large chilies, chopped
1 tbsp + 1 tsp cumin
1/2 tsp salt
2 1/4 cups chicken broth
fresh ground pepper
Soak beans overnight and rise thoroughly.
Cut chicken into bite sized pieces. Heat oil in a skillet over med. heat and add chicken. Saute 2-3 minutes, until chicken is browned on all sides.
In a large saucepan or Dutch oven, mix together all remaining ingredients, including chicken. Bring to a boil, then reduce to low. Cover and simmer for 2 hours.
Remove lid then continue to simmer for approx. 45 minutes.
Let sit about 10 minutes before serving.

I am okay with chili powder and I do make chili without tomatoes. Here's what I use:
About 1 lb hamburger broken into small pieces, browned slightly and drained.
Add one onion, finely chopped (leeks are okay too)
Stir in1/2 package chili spices (I buy the ready mixed McCormick's)
Add 2 cans black beans and 2 cans chicken broth.
Bring to boil and simmer for about a half hour. I serve with shredded cheese on top.
I read the labels carefully so I'm sure there isn't anything I can't have.

Donna...This sounds good. I never would have thought of not using tomato sauce and substituting broth for it. I can tolerate a little tomato sauce but it seems to upset my stomach more than my bladder. That is a great hint! Have you tried your chili recipe using canned beef broth instead of canned chicken broth? Do you use the low sodium broths?

I don't use canned beef broth because it contains tomato! I'm really allergic to any and all tomatoes and anything containing even a tiny bit.

I too have made "white Chili" and its great! You can use ground beef or I have heard of using both cubed chicken and also shredded chicken, any beans of your choice, chicken broth ( I use my homemade) and seasonings depending on your tolerance levels. They do sell a "White chili" seasoning packet in the store and thats really tasty! I make mine in the crock pot.
