View Full Version : Shrimp Alfredo

I made a pretty yummy-easy shrimp alfredo for my hubbie's and my dinner tonight.. its pretty IC friendly so I thought I'd share. I like it because I pretend i'm eating jarred tomato sauce or shrimp cocktails again... Please note I didn't measure any of the ingredients...

Ingredients:
mini-shells pasta
1 jar "classico" Alfredo Sauce... found in the grocery store aisle with jars of tomato sauce.
1 bag pre-cooked frozen cocktail shrimp
olive oil
milk
Shredded Mozzarella Cheese
black pepper

1. make the pasta, and thaw the shrimp.
2. after shrimp is thawed, saute it in a pan with olive oil and the minced garlic until shrimp is slightly browned and garlic is browned
3. pour 1/3 of the jar of Alfredo sauce into a saucepan. Dilute it with as much of the milk as you would like. Pour in as much of the mozzarella cheese as you like. Heat through until cheese is melted.
4. Pour pasta into bowl, add sauce and mix through. Add shrimp and garlic and mix through so all pasta and shrimps have some sauce on it. There shouldn't be a TON of sauce in the bowl as the pasta and shrimps should have stretched the sauce fairly far.
5. serve with the black pepper to taste.
