Roasted vegetable dip

--------------------------------------------------------------------------------

1 red bell pepper,coarsley chopped
1/2 onion chopped (optional)
4 garlic cloves cracked
1 small zucchini,sliced
1 tbls olive oil
8 ounces cream cheese at room temp
kosher salt and pepper to taste

Preheat oven to 400 degress

place the vegetables in a bowl and toss with the olive oil,place on cookie sheet in a layer and sprinkle with salt and pepper.Roast,for about 40 minutes until the edges of the veggies turn alittle brown tossing half way.When cooled
place veggies and cream cheese in the food processor until well combined.Use this for bagels in the morning or as a dip for veggies or crackers..ENJOY it is really good.........

I just made this.. It is AWESOME!!! I think next time I will put some Shrimp in it!!

I'm so glad that you liked it,adding shrimp sounds really good.I was thinking maybe adding some eggplant????????

I ate it with Ritz Crackers.. But I bet it would be good on bagels or celery..

Yum! Just made this for the Super Bowl. I used a yellow pepper cause it's what I had. And I added some garlic salt.

All though this dip was delicious it caused the worst flare I have ever had. I was up all night last night going back and fourth peeing for 5 hours! It was just too spicy for me and that was even with leaving out the onion and the black pepper! I ate the dip with celery and while eating I would drink water with baking soad and I took a prelief before hand.

At least my husband loves it so he will finish it off.
