3/4-1 can chickpeas, drained and rinsed
1 sweet red pepper, roasted and the skin removed
2 tablespoons olive oil or flax seed oil
2 cloves garlic, peeled (since I have horrific GERD, I roasted the garlic and only used one clove. Still awesome!)
Put all of the ingredients in food processor or blender and blend until smooth.
Serve with chips, pita bread, or just eat it! :) It's good!:woohoo:

it IS good...and sooooo easy! you can also add a bit of oregano and or basil for some extra flavor (and if you can tolerate it). i sometimes do this. i love this recipe cause it works so well with the olive oil and not tahini (can't really tolerate it) AND no lemon juice!

Oh yeah, it sounds like a definite keeper - think I'll make it for Super Bowl Sunday as I have been trying to come up with some easy and fun appetizers for hubby and I! I think you sold me when you mentioned roasting the garlic, I could eat that stuff like candy, lmao!!! ;)

Yummmm...It is 10:45am here and now I am starving after reading that recipe. :lmao:
Does Garlic give anyone a flare up? I would think that it would or maybe roasted it doesn't. I always thought Hummus had vinegar in it. Glad it doesn't. I may just use my olive oil infused with roasted garlic.
