Does Anyone Have A good,easy blue berry muffin recipe.Im want to make some this weekend and need a ic safe recipe.

I know you posted this along time ago. I bought the just add water mix from one of our stores that sales food in bulk and had no problems with it.

I realize this is an old post, but I thought I'd share a blueberry recipe that is oh-so-yummy and gave me no problems...

Makes 12 muffins

3/4 cup milk
1/4 cup veg. oil
1 egg
2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup fresh (or frozen) blueberries (I added about 1 1/4 cups...the more berries, the better!!!!)

-beat milk, oil, egg together
-stir in remaining ingredients (except blueberries) until it forms a lumpy mix
-fold in blueberries
-divide batter into 12 greased or lined muffin cups and bake for 20-25 min at 400 degrees until golden brown

-I also topped the muffins with a crumb topping before putting them in the oven. Mix:
1/4 cup flour
1/4 cup packed brown sugar
1/4 teaspoon cinnamon
2 Tablespoons butter cut in using pastry blender

OR you can top the muffins with some sugar crystals, like Sugar in the Raw.

just thought I'd share this recipe! It was quite easy, but then again, I looooove cooking and baking. :lmao:
