I just had to post my newest lunch creation and dinner menu find. I hope you like them!

Lunch idea:
I bought a can of organic chicken meat and mixed it with just enough reduced fat cream cheese to hold it together. I added chives and let it sit in the frig for a little. Then I toasted a bagel and topped it with my "chicken salad" and a few slices of cucumber.

Dinner:

Chicken with Basil Cream Sauce

1/4 cup milk
1/4 cup dry bread crumbs
4 boneless, skinless breast (I pounded mine pretty flat)
2 garlic cloves, minced
3 tbsp butter or margarine
1 tbsp olive oil
1/2 c chicken broth
1 cup heavy whipping cream
1/2 cup grated Parmesan cheese
1/4 cup minced fresh basil or 3-4tbsp dry basil
1/8 tsp pepper
1 tsp cornstarch

Preheat oven to 350. Dip chicken in milk and then coat with bread crumbs. In skillet over medium heat, brown chicken in olive oil and garlic. Remove and place in oven safe baking dish. Place in oven to keep warm.

Add broth to skillet. Bring to a boil over medium heat and stir to loosen browned bits from pan bottom. Stir in whipping cream and boil and stir for one minute. Reduce heat, add Parmesan, basil and pepper. Cook until heated through.

* Add cornstarch with extra chicken broth and stir into skillet if needed to thicken sauce.

Pour sauce over chicken and noodles or rice.

Enjoy!!!!

Sounds great! Would half&half work instead of the cream?

Oh YUM!! Those sound great - and here I sit wondering what the heck I am going to make for dinner as I starting to get hungry and I read this yummy post, ;)

Half and half would probably work. You will probably just have to add cornstarch to thicken the sauce. When I make it with heavy whipping cream I do not have to add any cornstarch.

Oh my goodness, that chicken recipe sounds so yummy! I adore basil and who could not love cream? LOL.
I am making this tonight! Thank you for the recipe.
