I made this last night, very simple meal, but I was pretty pleased with it.
Chicken, veggie kebabs.
Using a bamboo skewer, pierce small pieces of chicken, zucchini "coins", mushroom halves, red bell pepper slices & cook them on the George Foreman grill. (For flavor, I mixed canola oil with a little basil, oregano, garlic powder, salt & tossed the pieces in this before cooking.)
Serve over brown rice (Trader Joe's makes a great brown rice you keep in the freezer & microwave for 3 minutes, Voila! Brown rice without the wait.) & add a salad on the side. (Marie's Lite Creamy ranch dressing, 1/2T on the side to dip your fork in before bites).
Kind of fun to have a "grilled" dinner in winter, in the midst of a very big storm here in usually-sunny CA...
